I love this pretzel dessert. My aunt makes it every year at Thanksgiving and Christmas. It works great with strawberry and blueberry pie filling as well.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix pretzels, melted butter, and sugar together in a bowl; press into the bottom of a 13x9-inch baking dish.
- Bake crust in preheated oven until lightly browned, about 10 minutes. Remove to cool completely.
- Stir cream cheese and confectioners' sugar together in a bowl. Fold whipped topping with the cream cheese mixture until smooth; spread over the cooled pretzel crust. Spread cherry pie filling over the cream cheese layer.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together 1 1/4 cup flour and 1/3 cup brown sugar. Rub in 1/2 cup butter using your hands or a pastry blender. Press into an ungreased 9 inch square pan.
- Bake for 15 minutes in the preheated oven, or until lightly browned at the edges. Set aside. In a medium bowl, beat eggs until light. Mix together the brown sugar, flour, baking powder, and salt; stir into the eggs. Mix in the coconut, nuts, and cherries; spread the batter evenly over the baked crust.
- Return to the oven, and bake for 25 minutes, or until brown. Set aside to cool. In a small bowl, mix the confectioners' sugar, 2 tablespoons butter, vanilla, and water until smooth. Add more liquid if necessary to make a more spreadable mixture. Spread over cooled bars before cutting into squares.

CHERRY CRUMBCAKE SQUARES

- Preheat the oven to 350 degrees. Butter a 10 by 15-inch jelly roll pan and line the bottom with a sheet of parchment or waxed paper.
- In a large mixer bowl, beat the butter and sugar until soft and light. Add the eggs one at a time, beating well between each addition. Beat in the vanilla. Sift together the flour and baking powder and stir into the batter in three additions, alternating with the yolks and milk, beginning and ending with the flour. Spread the batter evenly in the prepared pan. Scatter the cherries evenly over the batter, pressing them in gently.
- Scatter the Crumb Topping over the berries as evenly as possible. Bake the cake about 40 minutes until batter is firm and crumbs are well colored. Cool the cake in the pan on a rack. Cut the cooled cake into 24 (3-inch) squares. Remove the squares from the pan to a platter.
- Mix the flour, sugars, cinnamon, and nutmeg in a bowl. Melt the butter and stir it in evenly. Rub the mixture to coarse crumbs by hand.
CROWD-PLEASER CHERRY SQUARES
This is my favourite bar-type cookie from Company's Coming! After you've tried it, you'll understand why.

Steps:
- FIRST LAYER: Crumble ingredients together well.
- Press into ungreased 9 x 9 inch pan.
- Bake in preheated 350F oven for 15 minutes.
- SECOND LAYER: Beat eggs slightly; add remaining ingredients in the order listed.
- If using maraschino cherries, drain well.
- I prefer using candied cherries- at Christmas, I use a mixture of red& green.
- Spread over first layer& return to oven for 25 minutes.
- Let cool completely.
- TOP LAYER: Beat ingredients in a small bowl, adding more water if necessary to make a more spreadable mixture.
- This makes a minimum amount of icing to spread over top.

CHEWY CHERRY BARS
Steps:
- HEAT oven to 350 degrees F. Spray 8-inch square baking pan with no-stick cooking spray.
- BEAT butter and brown sugar in medium bowl until smooth and fluffy. Beat in extract. Mix in flour, baking powder and oats until mixture is crumbly. Reserve 1/2-cup for topping. Pat remaining crumbs into bottom of prepared pan.
- SPOON preserves evenly over crumb crust in pan. Sprinkle with reserved crumb topping.
- BAKE 30 to 40 minutes or until lightly browned. Cool on wire rack. Cut into bars.
CZECH SQUARES

- Position a rack in the lower third of the oven and preheat to 350 degrees F.
- Spread the nuts out on a baking sheet and bake until lightly toasted, about 8 minutes. Cool completely.
- Butter a 9 by 12 1/2-inch baking sheet pan, then cover bottom with parchment paper.
- Pulse the walnuts with the sugar, in a food processor until fine and powdery, about 2 minutes. Add the flour, spices, and salt, pulsing until evenly combined. Add the butter, yolks, and brandy and pulse until the mixture starts to come together. Stop mixing and pull the dough together by hand, press and roll into a thick log about 8 inches long.
- Cut the log crosswise into 12 equal pieces. (If the dough is very sticky, refrigerate it until easier to work with, about 30 minutes.) Lay 8 pieces of the dough on the bottom of the pan. Press and spread the pieces together with your fingertips to cover the pan evenly.
- Stir the cherry jam, lemon zest and juice together in a bowl. Spread the mixture evenly over the surface of the dough with the back of a spoon.
- Roll the remaining dough out on a well-floured surface about 1/8-inch thick. Use a small decorative cutter, such as a leaf, tree, or star, to cut the dough into 24 pieces. Evenly place the pieces on top of the filling in 6 rows of 4. Alternatively cut the dough into long strips with a pizza wheel or knife, and place them on the filling in a lattice pattern; or cut the dough into ovals and lay them on the filling in a decorative pattern. Brush decorative layer of dough with egg white.
- Bake the squares until golden brown, about 40 to 45 minutes.
- Cool completely in the pan on a rack. Cut with a serrated knife into 2-inch squares.

- Heat oven to 180C/160C fan/gas 4. Butter and line the base and sides of a 22cm square cake tin: cut 2 strips of baking parchment the width of the tin and longer than the base and sides, and fit into the tin each way and up the sides. This will make lifting it out easier.
- Mix together the flour, sugar and oats in a bowl. Add the egg, melted butter and cherries, and mix well. Tip into the tin and spread evenly with a fork.
- Bake for 20-25 mins until golden brown. Cool in the tin for 10 mins, then carefully lift out using the paper and place on a board. Mark, but don't cut, 4 lines each way to make 16 squares. Melt the chocolate in the microwave for 1 min, then drizzle over the squares. When the chocolate has set, cut the squares down the marked lines.

- Heat oven to 300.
- Mix sugar, butter, almond extreact and egg in a large bowl until well blended.
- Stir in flour, 1/2 cup cherries, and salt.
- Spread in ungreased 15 1/2 x 10 jelly roll pan.
- Sprinkle on top the remaining cherries and the candies; press lightly.
- Bake until edges are very light brown, 30 to 35 minutes.
- Cool completely.
