Chicken poached in wine and broth, then served in a cream sauce, with spinach. It is best prepared with boneless chicken breast with the skin on to retain its shape, but boneless will work fine.

Steps:
- Place the chicken on a flat surface, skin side down, and open flaps. Season with salt and pepper. Heat 2 teaspoons butter in a skillet over medium heat. Add shallots. Reshape breasts and place seam side down in skillet over shallots. Add wine, chicken brother, and season with more salt and pepper. Toss in the parsley, cover and simmer 15 to 20 minutes, until breasts are just cooked through. Remove from heat.
- Meanwhile, prepare the spinach in a separate saucepan. Pour water in saucepan and add salt to taste and spinach. Stir until wilted. Bring to a boil, stirring occasionally, and cook about 5 minutes. Drain spinach, pressing out as much liquid as possible. Coarsely chop spinach and season with salt, pepper, and nutmeg. In another skillet heat 1 tablespoon butter until it begins to brown. Add spinach and stir until heated through. Set aside.
- Drain the liquid from the chicken and reserve. Remove the chicken and cover, keeping warm.
- In a saucepan heat the remaining 2 tablespoons of butter. Stir in the flour and whisk until blended. Add the reserved chicken cooking liquid, stirring with the whisk. After about 5 minutes is should be thickened and smooth. Add the heavy cream and cook 2 minutes. Remove from heat and add the egg yolk, stirring briskly.
- Meanwhile preheat the broiler. Spoon the spinach down the middle of a glass baking dish. Arrange chicken pieces on top of spinach. Pour sauce over both the chicken and spinach. Sprinkle the cheese on top. Run under the broiler until the cheese is melting and bubbly.

- Steam the spinach until wilted; drain and chop.
- In a large skillet, melt 2 Tbsp butter; saute the onions until golden.
- Remove onions with a slotted spoon; mix with spinach, and place in a buttered baking dish/casserole.
- Add 1 Tbsp butter to the skillet.
- Season chicken with salt and pepper (seasoning salt is okay to use) Brown the chicken, and remove to a warm plate.
- Saute the mushrooms in the remaining butter; then remove to plate with the chicken.
- Add the wine to the pan, and then stir in the flour; slowly add in the sour cream, and stir until hot and thickened.
- Add chicken, mushrooms and garlic powder.
- Place on top of spinach.
- Sprinkle with grated cheese.
- Bake in a 350 degree oven, for 20-30 minutes.

- Sprinkle the chicken with salt and pepper. Dredge the chicken in the flour to coat lightly. Shake off any excess flour. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the chicken and cook until brown, about 5 minutes per side. Transfer the chicken to a plate and tent with foil to keep it warm.
- Melt 2 tablespoons of butter in the same skillet over medium heat. Add the shallots and garlic and saute until the shallots are translucent, stirring to scrape up any browned bits on the bottom of the skillet, about 1 minute. Add the wine. Increase the heat to medium-high and boil until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce reduces by half, stirring often, about 3 minutes. Stir in the parsley. Season the sauce, to taste, with salt and pepper. Add the chicken and any accumulated juices to the sauce, and turn the chicken to coat in the sauce.
- Meanwhile, melt the remaining 2 tablespoons of butter in another large skillet over medium heat. Add the spinach and saute until heated through. Season the spinach, to taste, with salt and pepper. Arrange the spinach over a platter. Place the chicken atop the spinach. Pour the sauce over and serve.

My wife loves beef and salmon Wellington, so I thought why not chicken? It turned out excellent! Impress your friends with this one. Top with a Bearnaise or Hollandaise sauce.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Place spinach in a microwave-safe bowl. Cover and microwave on medium power for 6 minutes. Remove cover and stir. Remove to a strainer and let cool.
- While the spinach is cooking, butterfly the chicken without cutting all the way through. Whisk egg and water together in a small bowl. Unfold pastry sheet and cut down the folds to make 3 equal pieces.
- Melt butter in a large skillet over medium heat and add chicken. Saute until no longer pink in the center and the juices run clear, 2 to 3 minutes per side. Remove to a plate.
- Squeeze spinach to remove excess water. Combine spinach with garlic, lemon juice, mayonnaise, Parmesan cheese, thyme, salt, and pepper; mix well.
- Put 1/3 of the spinach mixture in each open chicken breast and top with a 1 slice of provolone cheese. Fold the top of each chicken breast in order to sandwich the spinach and cheese in between. - Preheat the oven to 400 degrees F (200 degrees C). Mix salt and garlic powder together in a small bowl.
- Combine spinach and water in a microwave steamer. Microwave on high for 60 seconds. Drain spinach, then squeeze out any excess water.
- Roll pizza dough on a lightly floured surface to a 14-inch circle.
- Pour oil into a 12-inch cast iron skillet. Sprinkle 1/2 of the garlic salt over the bottom of the skillet. Place dough into the skillet and shape crust so edges come up the sides of the skillet. Prick holes in the bottom of the dough with a fork.

- Preheat the oven to 180c 160c for fan oven or gas mark 4. De-stalk the spinach if needed, place in colander and pour a kettle of boiling water over to wilt, leave to drain. When cool, squeeze out excess water and chop up. Season with salt, pepper and nutmeg. Place spinach in a oven proof baking dish.
- In a large frying pan, melt 30g of butter and cook onions until soft and golden. Remove onions from pan and add to the spinach and mix together.
- Add diced chicken to pan with a little seasoning with a little more butter and brown chicken all over. Once browned, remove from pan and place on a warm plate and set aside.
- Put the last of the butter in the pan and add the crushed garlic and mushrooms and cook until soft. Once soft add the flour to the pan and coat the mushrooms in the flour. Add the white wine and stir quickly to make a thick sauce. Turn down the heat and slowly add the cream fresh to make a lovely sauce. Add the chicken back to the pan and thoroughly coat with the sauce.
- Place the chicken, mushrooms and sauce on to of the spinach in the oven proof dish. top with the grated cheese. Add a little grated nutmeg to the cheese.
- Place in the oven for 20-25 minutes until cheese is bubbling and golden brown.
- Serve with boiled rice and a glass of chilled white wine.
