OTTO'S CHICKEN APPLE SAUSAGE

Steps:
- Par-freeze meat for 30 minutes. Have a meat grinder and stuffing attachments ready and assembled.
- In a small bowl, combine the salt, cinnamon, cloves, coriander, ginger and granulated onion so they will evenly disperse when adding to the ground meat. Slice the meat into 1-inch cubes. Grind the meat and apples together using the coarse disc on your grinder.
- In a large bowl, combine meat and apple mixture with the seasonings. Using your hands, mix the meat and seasonings well. This process may take a few minutes to get the seasonings well dispersed. Stuff the forcemeat firmly into the casings. Twist the finished sausage into 6-inch links.
- Poach the sausages in in 160 degree F water for 20 minutes. Cooked sausages keep, refrigerated, for up to 3 days.
CRISPY CHICKEN WITH CORN AND SAUSAGE
Steps:
- Preheat the oven to 400 degrees F. Position an oven rack in the middle of the oven.
- Melt the butter in a large oven-proof skillet over medium heat. Add the onions. Season with salt and pepper. Cook, stirring frequently, until the onions are translucent and very soft, about 5 minutes. Add the sausage and cook until hot. Mix in the corn, heavy cream, Parmesan and garlic powder.
- Place the chicken thighs skin-side up on top of the corn mixture. Drizzle the chicken skin with some oil and sprinkle with salt and pepper. Place the skillet on the middle rack of the oven and bake until the chicken is brown and crispy, 30 to 35 minutes.
- Remove from the oven and let the chicken rest for 5 or 10 minutes. Serve with rice.

- Heat oil in a large, deep skillet over medium-high heat. Add sausage slices and cook until browned, about 5 minutes. Remove sausage and set aside.
- Add sweet potatoes and half the water to the skillet; boil for 5 minutes. Stir in the sausage, apples, remaining water, sugar, and cinnamon. Season with salt and pepper; reduce heat to medium. Cover and cook, stirring occasionally, until potatoes are soft, 10 to 15 minutes. Serve hot.

APPLE CHICKEN SAUSAGE STIR-FRY ON RICE
I came up for this while trying to use the ingredients on hand. The apples complement the apple chicken sausage perfectly. The lemon juice, chili powder and chicken bouillon was added to lessen the sweetness caused by the apples so if you prefer spicier or sweeter feel free to change the ratios.

Steps:
- Cook the rice according to its directions so it is finished at the same time.
- When there is 20 minutes left in the cooking time for the rice remove the casing from the sausage and brown while breaking the sausage up.
- When the sausage is near done add the garlic and onion to brown.
- Once sausage is done and the garlic is preferred state add the balsamic vinegar, lemon juice, chili powder, bouillon crystals, apple, tomato and lemon juice.
- When the apples haven softened (a sauce should be forming) add the celery (for texture).
- When the sauce and celery are to your preference it is ready to serve. Top the rice with the stir-fry.

- Start long grain rice.
- Make mustard vinaigrette. In a glass bowl, add mustard and red wine vinegar, slowly add olive oil as you whisk. Add S & P. Set aside.
- In a skillet, fry sausage over med. heat, crumble as it cooks. Add the corn and cook for 3 minutes stirring occasionally.
- Place cooked rice in a large bowl, add the hot sausage mixture and the cheese. Toss lightly.
- Add the spinach and toss.
- When ready to serve, place on plate, top with pine nuts and mustard vinaigrette. Enjoy.

- Melt 1 tablespoon butter in a skillet over medium-high heat. Add chicken and cook, 2 minutes per side. Remove and set aside.
- Heat remaining butter over medium heat in the same skillet. Saute rice from rice mix in the hot butter until golden brown, 5 to 7 minutes. Stir in water, apple juice, apple, onion, raisins, and seasoning packet from rice mix slowly. Bring to a boil. Place chicken over rice. Reduce heat to low, cover, and let simmer until chicken breasts are no longer pink in the centers and rice is tender, 15 to 20 minutes. Let stand for 5 minutes before serving.
