Plus, this is a quick 'n easy one dish meal (don't mind the long list of ingredients, it really goes together quickly, I promise). The veggies get "sneaked in" & they contribute mellow depth of flavor, while providing valuable health benefits to your family (and nobody will be the wiser!). :) Serve hot on a warmed hamburger bun (we like soft potato buns) with or without shredded cheese, and a pickle spear on the side is good.   • Preheat a large Dutch oven or saucepan over low heat. Now add the fat to the pan and when melted add the ground beef, celery, onion, carrots, and potato. Cook and stir over medium to medium-high heat until beef is no longer pink; now add the bell peppers and cook until the peppers are softened.
  • Add seasonings and remaining ingredients and stir well. Cover the pan, reduce heat to low and simmer for about 20-25 minutes, stirring every five minutes or so until done to your liking (if Joes are too 'loose' uncover your pan and cook uncovered until the consistency you like).
  • Serve on a warmed hamburger bun with or without shredded cheddar cheese.

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

  • In large pan, I use a large electric skillet, brown the ground beef and sausage. Drain off the fat.
  • Add remaining ingredients to the pan except for the flour and mix well.
  • Cook on low heat, stirring occasionally breaking up any large chunks of meat.
  • Once mixture has cooked through (approximately 60 mins) and is slightly thickend sift flour over the top and mix in well to further thicken.
  • Note: This can also be made in a crockpot, simply put the browned meats in the crock pot - add the remaining ingredients except for flour, cook on low 6-8 hours and then turn to high and stir in the flour to thicken.

  • Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
  • Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic.
