CHICKEN CORDON BLEU BITES
I created this recipe to try to duplicate some appetizers I had last summer from Stew Leonard's famous dairy retail store in Connecticut. They are great as appetizers or as a fun food for kids. I love to make them with bread crumbs seasoned with Parmesan cheese. Enjoy!

- Combine the chicken, ham, and egg in a large bowl until well blended. Gradually add bread crumbs until the mixture loses its stickiness and can be easily formed into balls.
- Form the chicken mixture around the cheese cubes, forming 2 inch balls. Place on a plate.
- Heat 1 1/2 inches of oil in a deep skillet to 350 degrees F (175 degrees C). Fry the balls until the outsides are golden brown, about 4 minutes. Drain on paper towels, and place in baking dish.
- Bake in preheated oven until cooked through and cheese is soft, about 20 minutes. Cool briefly before serving.

CHICKEN CORDON BLEU BITES
Found this online -- looks simple to put together and yummy! Original recipe requires frying -- but I wonder if it could not be completly done in the oven. If someone tries this before me and wants to be brave and skip the frying step and bake longer, let me know your changes and I will edit the recipe. Thanks!!

Steps:
- Preheat oven to 350 degrees F.
- Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Remove the top sheet of plastic and lay 2 slices of prosciutto neatly over the top to cover the breast and sprinkle a quarter of the cheese over the prosciutto. Tuck in the sides of the breast and roll up tight like a jellyroll inside the plastic wrap. Squeeze the log gently to seal and twist both ends tight to form a nice log. Repeat with remaining chicken.
- Season the flour with salt and pepper. Mix the bread crumbs with thyme, garlic and kosher salt, pepper, and melted butter. The butter will help the crust brown. Beat together the eggs and season so the flour, the eggs and the crumbs are all seasoned.
- Remove the plastic wrap. Lightly dust the chicken with flour, dip in the egg mixture and gently coat in the bread crumbs. Lightly coat a baking pan with olive oil and carefully transfer the roulades onto it. Bake for 20 to 25 minutes until browned and cooked through.
- Cut into pinwheels and serve on top of Brussels Sprout Hash with Chicken Jus and Cranberry Chutney, if desired.
CHICKEN CORDON BLEU I
This entree is easy and delicious! It's one of my husband's favorites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

Finally, roll the bites in the bread crumbs, coating completely. * Place the bites back onto the baking sheet. * Deep-fry the bites in batches of 6-8 at a time for about 3-4 minutes, or until deep-golden brown. * Serve with the dipping sauce.

- Cut chicken breasts into bite size pieces. (I ended up with about 35 pieces, so cut your chicken first, count your pieces, and then you'll know how many pieces of ham and Swiss you need.)
- Slice ham and Swiss slices so that you have 2 pieces for each piece of chicken, set aside for later use.
- Place your milk and Panko in shallow dishes for easy dipping. Dip each chicken piece into milk to coat, then add to flour baggie mixture, then back to the milk, and then into the Panko, making sure to turn and coat each side well. Set finished pieces on a plate until oil is ready. (I put several pieces in at a time, for each of the coating steps, to be more efficient.)
