GRILLED BACON APPLE SANDWICH
This is a big, messy sandwich that sounds quirky but is delicious! Great for warming up in the fall and very kid-friendly. The proportions of this recipe are approximate, and feel free to change them to suit your needs. The bacon provides saltiness, the jelly provides sweetness, the apple provides tartness, and the cayenne pepper the spiciness. However, including all ingredients provides a more complex range of awesomeness.

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Spread the peanut butter onto two slices of bread; set aside. Spread the apricot jelly onto the remaining two slices of bread, and sprinkle with cayenne pepper to taste. Arrange half of the cooked bacon and half of the sliced apple onto each apricot jam-covered bread sliced. Top with the peanut butter smeared pieces of bread.
- Heat a large skillet over medium heat. Spread the butter over the outside of the sandwiches and place into the preheated skillet. Cook until golden brown and crispy, then turn the sandwiches over, and continue cooking until golden brown on the other side, about 4 minutes per side.

MAPLE GLAZED BACON LONG JOHN

- Sprinkle the yeast over the warm water and let stand until foamy, about 5 minutes.
- In a large bowl of a stand mixer or using an electric mixer, mix together the yeast mixture, milk, sugar, shortening, salt, eggs and 2 cups flour. Mix for a few minutes at low speed, or stirring with a wooden spoon.
- Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead until smooth and elastic, about 5 minutes Place the dough into a greased bowl and cover. Set in a warm place to rise until doubled in size. The dough is ready if you touch it and the indention remains.
- Turn the dough out onto a floured surface and gently roll out to 1/2-inch thickness. Cut with a floured donut cutter. Let the donuts sit out to rise again until doubled in size. Cover loosely with a cloth.
- Heat the shortening in a deep-fryer or large heavy skillet to 370 degrees F. Slide the donuts into the hot oil using a wide spatula. Turn the donuts over as they rise to the surface. Fry on each side until golden brown. Remove from the oil and drain on a wire rack.
- While hot, dip the donuts into Maple Glaze, then into bacon pieces and set onto wire racks to drain off excess.
- Mix 2 cups sugar, corn syrup, maple syrup, maple extract and salt into mixer. Mix well, 15 to 20 minutes. Add additional cup of powdered sugar to get to desired thickness. You may also add additional maple extract for desired taste.

- Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. - 1. In a large skillet, cook the bacon over medium heat, turning occasionally, until browned and crisp, about 8 minutes. Drain on paper towels.
- 2. While the bacon cooks, pat the scallops dry and sprinkle with the salt and cayenne. To the bacon fat in the pan, add the butter and turn the heat to high. When the butter foam subsides, add the scallops in a single layer. Cook, turning once, until nicely browned and just opaque throughout, about 2 minutes. Transfer to a plate.
- 3. Drain any remaining fat from the skillet. Add the Crown Royal® Maple Finished Whiskey and boil, stirring and scraping the browned bits from the pan, until reduced to 3 tablespoons, about 5 minutes. Stir in the sugar until the mixture becomes syrupy and thick, about 1 minute, then turn the heat to low. Break each strip of bacon in half and add to the syrup. Cook, turning, until well coated and caramelized.
- 4. On each apple slice, stack a scallop and a piece of bacon. Garnish with red onion slices and serve.
GRILLED MAPLE-CHIPOTLE BACON
If you've never grilled bacon before, you'll be amazed by the flavor! Not only does it save cleaning up a mess on the stove, the charred flavor is out of this world! Add to that the sweet-heat kick of maple and chipotle and you've got yourself quite the breakfast treat. You may just want to double the recipe! - Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Combine maple syrup and chipotle powder in a small bowl.
- Place a disposable aluminum pan on the upper rack of your grill or over one burner on indirect heat.

- Cook the bacon to preferred doneness; chop or crumble. Toss the bacon with the breadcrumbs, cheddar cheese, 1/4 cup of the BBQ sauce and onion until combined; set aside.
- Preheat the grill to medium-high. Cut the apples in half, corsswise. Use a melon baller to scoop out the seeds and create a hollow in each of the apple halves. Brush the apples with the remaining BBQ sauce; season with salt and pepper to taste.
