Chicken Heart Pâté image

Steps:

  • Throw the hearts, diced chicken breast, chopped tomatoes, onion, carrots and parsnip into boiling water and let it all simmer for at least 30 minutes.
  • Take the lid off the pan and let the liquid reduce itself for about fiftenn minutes.
  • Sieve the mixture, trying not to loose the liquid - it makes great soup.
  • Put all the boiled ingredients into a large bowl (or back into the pan) and add lard, tomato concentrate and chickpea. Mix thoroughy with a spoon.
  • Set up the food processor and blend everything together until a fine paste is made. It should have the consistency of dumpling dough, if it's toothick add some broth or brine.
  • Put the paste into a cake tin and bake for about 1.5 hour in 250 degrees centigrade. Poke the pâté once in a while to check if it's ready.
  • When properly baked, take the pâté out of the tin and let it cool down. Serve in slices on a buttered toast.

2 large carrots
1 large parsnip
400 ml chickpeas (with the brine it's been canned in)
200 g chicken breasts
2 1/2 tablespoons tomato concentrate
2 1/2 tablespoons lard
2 big onions

CHICKEN-LIVER PâTé

You could serve this chicken pâté as an appetizer at a dinner party, or simply as a light (really!) supper or a sandwich spread. It takes less than a half-hour to prepare, and it will firm up in the refrigerator in a few hours. Simply pack the mixture into a bowl or glass jar, cover and refrigerate.

Steps:

  • Put a large, heavy sauté pan over medium heat, and melt 4 tablespoons of the butter until it begins to foam. Add the shallots, and sauté them until translucent, being careful not to allow them to brown. Add the livers, thyme and Madeira or port, and bring the heat to high. Cook, occasionally stirring the livers around in the pan with a spoon, until the wine has reduced and the livers are lightly browned but still very soft and pink on the inside, approximately 5 minutes.
  • Remove the pan from the stove, and put its contents into a blender or food processor, along with the cream and the remaining butter. Purée until smooth, adding a little more cream if necessary. Taste and adjust seasoning, adding salt if necessary.
  • Pack the pâté into a glass jar or bowl, then smooth the top with a spatula. Cover with plastic wrap and refrigerate until firm, about two hours or up to five days. Serve with bacon-onion jam and copious amounts of toast.

HEART HEALTHY CHICKEN CACCIATORE

This recipe is one that my mom adapted to make heart heathy for my dad who had had a heart attack. She is an excellent cook and was able to adjust almost all of her recipes to make them heart healthy. We all ate healthier after that! Very simple to make and guests never suspect it is actually good for them which is an added bonus.
