CHICKEN PENNE ARMADILLO GRILL

Chicken, Penne,Pesto & Sundried tomatoes... oh yes. This gem comes from my Best of Arizona Cookbook contributed by the 5 star Armadillo Grill. The cayenne pepper brings a little zing, if you want more hot... add more.

Chicken Penne Armadillo Grill image

Steps:

  • Preheat broiler and place chicken breasts and red pepper strips to baking sheet, sprinkle with cayene; broil until golden brown (about 20 minutes); set aside, and slice chicken in diagonal pieces.
  • Begin cooking pasta until al dente.
  • In a saucepan, heat oil and saute' onion and garlic.
  • Deglaze pan with white wine and reduce liquid, adding tomatoes & cook 3-4 minutes.
  • Then add pesto, cream and seasonings, stir until fully incorporated.
  • Add drained pasta to sauce and toss, then divide mixture among 4 warm plates and top each with chicken slices and red peppers.
  • Garnish with Parmesan and fresh basil leaves.

10 ounces boneless chicken breasts
2 red bell peppers (cut in 1/2-inch strips)
1 1/2 teaspoons cayenne pepper
1/2 lb penne pasta
2 teaspoons olive oil
4 tablespoons onions (minced)
1 tablespoon garlic (minced)
2 cups white wine
1/2 cup sun-dried tomato (julienned)
1/2 cup pesto sauce
2 cups half-and-half
1/3 cup parmesan cheese
2 tablespoons fresh basil

Recipe is from Colavita Olive Oil. This will come in handy in Mexico where it's impossible to find fresh basil! I can think of so many uses for the pesto . . .!

Cilantro-Serrano Pesto With Grilled Chicken and Penne image

Steps:

  • Place Cilantro and the next 6 ingredients (through chili) in a food processor; process until well blended.
  • With processor on, slowly pour olive oil through the food chute: process until well blended.
  • Place pesto in a large bowl, stir in vinegar and black pepper.
  • Grill Chicken (indoor our out).
  • Heat outdoor grill or grill pan over medium heat.
  • Coat chicken with olive oli.
  • Season with salt and pepper.
  • Grill chicken (or cook in pan) until done.
  • Cut chicken into bite-sized pieces.
  • Add chicken, cooked pasta, and tomatoes to pesto.
  • Toss to combine.
  • Sprinkle with grated parmesan cheese.

1 lb boneless skinless chicken breast (I use the marinated chicken breast)
2 tablespoons olive oil

6 cups hot cooked penne pasta (follow directions on package)
2 cups cherry tomatoes, halved
1/2 cup grated parmesan cheese

Steps:

  • Mix together all marinade ingredients and add to cubed chicken. Allow the chicken pieces to marinate up to 24 hours.
  • Prepare the chipotle cream sauce by combining ingredients; set aside.
  • Drain marinade from chicken. In a hot saute pan with a little melted butter; add the chicken and onions. Cook until half done. Add the diced green chiles, mushrooms and Chipotle Cream Sauce. Bring to a simmer and let cook for another minute. Add the pasta; toss until well mixed. Pour into a warm pasta bowl. Garnish with crumbled cotija cheese and cilantro sprigs.
