Steps:

  • For the chicken: Sprinkle the chicken with salt and pepper. Heat some vegetable oil in a medium saute pan over medium heat. Add the chicken and sear on both sides. Cook until cooked through, 10 to 15 minutes, depending on size.
  • For the tapenade: In a bowl, mix together the olives, garlic, oil and some pepper.
  • For the sauce: In a small bowl, mix together the ketchup, mayonnaise, mustard, garlic salt, onion salt and pepper.
  • For the sandwich: Toast the hamburger bun. Place the bun on a plate and spread with some of the sauce. Layer the bottom bun with the lettuce and tomato, then add some of the tapenade. Add the chicken and top with more tapenade. Cover with the bun top and serve immediately.

6 ounces chicken breast
Kosher salt and freshly ground black pepper
Vegetable oil, for pan
3 ounces pimiento-stuffed olives, finely chopped
1 teaspoon minced garlic
2 teaspoons grapeseed oil
Ground black pepper
1 teaspoon ketchup
1 teaspoon mayonnaise
1 teaspoon mustard
1/3 teaspoon garlic salt
1/3 teaspoon onion salt
1/3 teaspoon black pepper ground
1 hamburger bun
1 green leaf lettuce leaf
2 slices tomato

Fried Chicken Sandwich With Hot Honey image

Steps:

  • Fried Chicken:.
  • In a shallow baking dish whisk together flour, paprika, salt and pepper.
  • Working in batches place the chicken in the flour mixture, turning to coat thoroughly. Pour the buttermilk in another shallow baking dish. Coat the chicken in the buttermilk then place back into the flour to coat one more time. Place the chicken on a wire baking rack over a sheet tray until ready to fry.
  • In a cast iron pan add enough oil to fill about 2 inches up the sides of the pan. Heat the oil to 350 degrees over medium high heat. Fry the chicken in batches turning once until golden brown and cooked through. The breast should be done in about 3-4 minutes per side. Remove to a paper towel lined plate and season with salt.
  • Build the sandwiches by placing the fried chicken on a bun and topping with the slaw, hot honey and pickles.
  • Slaw: Combine all ingredients in a large bowl and toss to coat. Season with salt and pepper to taste.

  • In a small saucepan combine ingredients. Bring the mixture to a simmer over medium heat. Simmer for 2-3 minutes then remove from heat and allow to cool to room temperature.

2 cups red cabbage, thinly sliced
1 onion, small, red, thinly sliced
2 tablespoons red wine vinegar
1/4 cup mayonnaise
3/4 cup honey
1 jalapeno pepper, sliced in half lengthwise
1 fresno chile pepper, sliced in half lengthwise

Steps:

  • Either leave the chicken breasts whole, or slice into 1cm thick slices, depending on personal preference and time.
  • Mix together the tomato puree, tomato sauce, worchestshire sauce, soy sauce, olive oil and seasoning until it forms a loose paste. This may require tweaking the amounts, depending on quality of ingredients.
  • Mix chicken into sauce and leave for 5-10 minutes.
  • Heat a frying pan and add the chicken and sauce. Try to keep the chicken spread out so it doesn't steam. Cook until browned.
  • Spread some of the hot sauce onto the ciabatta in place of butter and pile the chicken onto the rolls. Add the salad leaves if using, or try adding grated cheddar cheese.
