TROPICAL CHICKEN PATTIES

Steps:
- Put the chicken, half of the green jalapeno, half of the garlic, the allspice, 1/4 teaspoon salt, and pepper to taste in a large bowl. Mix with your hands and form into four 1/2-inch-thick oval patties. Put the patties on a plate, cover and refrigerate until ready to cook.
- Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Add half of the red onion, the remaining green jalapeno and garlic, and the turmeric and cook 1 minute. Add the rice, 1/4 teaspoon salt and 2 cups water. Bring to a boil, stir and reduce the heat to medium low; cover and simmer until the rice is tender, about 15 minutes. Add the peas but don't stir; cover and set aside.
- Heat 1 tablespoon vegetable oil in a nonstick skillet over medium-high heat. Add the patties and cook until firm, about 4 minutes per side. Toss the pineapple, cilantro, red jalapeno, and the remaining red onion and 1/2 tablespoon vegetable oil in a bowl. Season with salt.
- Stir the rice and peas and season with salt and pepper. Serve with the patties and pineapple salsa.

- Combine chicken, onion, parsley, egg, garlic, sea salt, and pepper in a bowl; mix well. Add mayonnaise and stir to combine; the mixture will be quite soft.
- Place flour in a shallow bowl. Drop large spoonfuls of the chicken mixture into the flour. Roll to coat and press gently into patties.
- Heat oil in a skillet over medium-high heat. Cook chicken patties in the hot oil until golden brown and no longer pink in the center, 5 to 7 minutes per side.

SPINACH AND CHICKEN QUINOA PATTIES (VEGETARIAN VARIATION INCLUDE
This is a recipe that I adapted from the Yummy Supper Blog. It's easily adaptable by changing which spices and vegetables to add or what to put on top. Some fresh bruschetta would be great with this variation, or amy be some salsa and avocado with a more southwestern variation with chili powder, corn, bell peppers, and black beans. Easily made vegetarian by omission of chicken.

Steps:
- Rinse Quinoa thoroughly, then add rinsed quinoa and water to a small pot. Let quinoa soak for fifteen minutes and then bring water to boil. Cover pot, reduce heat, and allow to simmer for 20 minutes or until water is absorbed and quinoa is tender.
- Peel and mince onions and garlic, but keep separated. Chop spinach.
- Saute onions in a large pan with olive oil, when onions are translucent, add spinach and garlic. Cook until spinach is wilted. Remove from heat.
- Chop cooked chicken into small pieces.
- Mix quinoa, vegetable medley, and chicken in bowl.
- Add salt, red pepper flakes, and herbs to taste, and allow mixture to cool to room temperature.
- Whisk 3 eggs together in a bowl.
- Add eggs to seasoned quinoa mixture and mix in thoroughly.
- Heat saute pan with medium heat, add olive oil.
- Form a couple of spoon fulls of mixture into a 3 inch wide patty, about 3/4 of an inch thick. Patty mixture may seem loose, but should cook nicely because of the egg.
- Place in pan and cook on both sides until brown. (I recommend cooking one patty and tasting it cooked before cooking the whole batch, add more seasoning if necessary.).
- Serve hot. (Some serving suggestions in recipe description.).

BROCCOLI CHEESE STUFFED CHICKEN WITH SPINACH PATTIES
I came up with this the other night as I had some left over broccoli and prosciutto to use up and they turned out really well. It is not a quick meal like the ones I have been posting lately as you have to stuff the chicken and make the mixture for the spinach so it has a lot more prep time in it. I would say about 30 minutes on the prep longer if you make it for more than 2 people I was only making it for my hubby and I. Cooking time is 30-35 minutes to cook chicken in the oven, the patties can be made while chicken is baking.

- Preheat oven to 180°C.
- Open out chicken breasts, using a meat mallet pound each breast until of equal thickness.
- Divide broccoli between breasts from top to bottom down the centre, top with basil leaves, then sun-dried tomato, finally press cheese firmly over tomato to form a small mound. Fold breasts over to enclose filling and wrap prosciutto around each breast to secure.
- Place breasts in a lightly oiled oven proof dish and cook in pre-heated oven for 30-35 Min's or until chicken is cooked through.
- Sauce.
- Combine wine, water, lemon juice, parsley, stock and mustard in a saucepan. Heat over med high heat, use a whisk if necessary to combine mustard fully, you don't want lumps.
- Mix a little water with the cornflour and add to sauce stir until mixture thickens, add cream and stir to heat through. Serve with chicken.
- Spinach:.
- Heat some water in a pan, plunge spinach leaves into water for only a minute, drain, squeeze out any excess water.
- In a small fry pan cook bacon, drain on absorbent paper.
- Combine spinach, onion, garlic, bacon, cream, stock and cheese, in a microwave safe bowl, stir well. Microwave for about 1 minute to melt cheese, stir again.
- Make sure mixture is cool enough to add egg as you do not want it to cook. Add egg and panko flakes.
- Heat some oil in a pan, using a tablespoon divide mixture into roughly 4 equal parts. Take spoonful of mixture add to pan press down to form a pattie shape and cook until browned on both sides.
- To Serve: Place chicken on a plate, spoon some sauce over, garnish with a basil leaf, place patties on plate and garnish with kumara curls if desired.
- Kumara curls: If you wanted to do this just peel kumara, then using a vegetable peeler peel kumara into strips, heat some oil in a pan (about 1/4 inch deep). Add kumara and fry until it curls up and is crisp.

- Blanch the spinach in boiling for 5 minutes, then drain them and let them cool down. Once cold, squeeze them out and chop them finely with a knife. Cube the raw chicken breast and blend it.
