SLOW-COOKER COUNTRY CAPTAIN CHICKEN

Legend has it that the recipe for country captain chicken was brought to Georgia in the early 1800s by a British sea captain. Although it's traditional to serve this over rice, it's also delicious with noodles or mashed potatoes. -Suzanne Banfield, Basking Ridge, New Jersey

Slow-Cooker Country Captain Chicken image

Steps:

  • Place onion, pepper and garlic in a 6-qt. slow cooker. Arrange chicken pieces over vegetables., Whisk the next 5 ingredients with the chicken broth. Pour over chicken. Cover and cook on high for 1 hour. Add raisins and tomatoes. Reduce heat to low and cook until chicken reaches 165°, about 2-1/2 hours. Serve over rice; if desired, sprinkle with parsley.

1 large onion, chopped
1 medium sweet red pepper, chopped
2 teaspoons minced garlic
3 pounds boneless skinless chicken thighs
1 tablespoon curry powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon dried thyme
1 tablespoon packed brown sugar
1/2 cup chicken broth
1/2 cup golden raisins or raisins
1 can (14-1/2 ounces) diced tomatoes, undrained
Hot cooked rice
Chopped fresh parsley, optional

EASY CHICKEN SUZANNE

I love this recipe because it is so easy, and melts in your mouth! My aunt used to make this many years ago, and I retrieved this recipe from her a few years ago. I usually serve this chicken (and sauce) over rice, or noodles, with green beans or a salad. It makes a great meal for company, too! They will think you've been slaving...

Easy Chicken Suzanne image

Steps:

  • 1. Preheat oven to 350 degrees. Sear chicken breasts in hot butter, until crust forms. Place in a Pyrex pan big enough to hold the breasts.
  • 2. Mix together, in a small bowl, the sour cream, sherry, and cream of mushroom soup. Pour this over the chicken, and cover tightly with foil.
  • 3. Bake in 350 degree oven for 1- 1 1/2 hours, until chicken is done.

4-6 chicken breasts, salted and peppered
1 stick butter, softened
1/2 c sour cream
1/2 c sherry
1 can(s) cream of mushroom soup

CHICKEN IN A BALSAMIC DIJON SAUCE

This reciped is adapted from Suzanne Sommers. I serve this along side with Rice a Roni Chicken and Mushroom rice. The sauce is good over the rice. I double the sauce. Steamed asparagus pairs nicely with it. Leftover sauce is also good served along side a nice juicy grilled ribeye!!

Chicken in a Balsamic Dijon Sauce image

Steps:

  • Heat a large skillet over medium high heat. When pan is hot, add butter and melt. Add chicken breasts and cook 6 minutes. Turn and cook another 6 minutes. Remove from skillet and keep warm.
  • Add onions to skillet and 5 minutes, scraping bits off bottom of pan, add mushrooms and cook until onions and mushrooms are tender.
  • Add cream and vinegar, bring to a boil, reduce heat and simmer 4 minutes. Stir in mustard, parsley, salt and pepper.
  • Spoon over chicken breasts and serve.
  • (I add the chicken back to the skillet with the juices and simmer about 10-15 minutes).
  • This one is really tasty!

4 boneless skinless chicken breasts
2 tablespoons butter (must use butter here)
1/2 cup finely chopped onion
1 cup chopped shiitake mushroom
1 cup heavy cream (1/2 and 1/2 works fine)
2 tablespoons balsamic vinegar
1/2 tablespoon Dijon mustard
2 tablespoons chopped fresh parsley
salt and pepper

ROASTED CHICKEN PROVENçAL

This is a recipe I picked up from Steven Stolman, a clothing and interior designer whose "Confessions of a Serial Entertainer" is a useful guide to the business and culture of dinner parties and general hospitality. It is a perfect dinner-party meal: chicken thighs or legs dusted in flour and roasted with shallots, lemons and garlic in a bath of vermouth and under a shower of herbes de Provence. They go crisp in the heat above the fat, while the shallots and garlic melt into sweetness below. You could serve with rice, but I prefer a green salad and a lot of baguette to mop up the sauce.

Roasted Chicken Provençal image

Steps:

  • Heat oven to 400 degrees. Season the chicken with salt and pepper. Put the flour in a shallow pan, and lightly dredge the chicken in it, shaking the pieces to remove excess flour.
  • Swirl the oil in a large roasting pan, and place the floured chicken in it. Season the chicken with the herbes de Provence. Arrange the lemon, garlic cloves and shallots around the chicken, then add the vermouth to the pan.
  • Put the pan in the oven, and roast for 25 to 30 minutes, then baste it with the pan juices. Continue roasting for another 25 to 30 minutes, or until the chicken is very crisp and the meat cooked through.
  • Serve in the pan or on a warmed platter, garnished with the thyme.
