TANDOORI CHICKEN WRAPS
This is a delicious meal in a wrap, based on Tandoori Chicken Wraps Without the Tandoor (#177048) from Chef MrsMM. I've rewritten here with a few adjustments to make it easier for me (and maybe you) to do the prep next time and use alternative ingredients.

Steps:
- For yogurt marinade: Combine first 8 ingredients.
- Cut chicken into bite-size pieces and stir into yogurt until completely covered. Cover and marinate in refrigerator for at least one hour.
- For yogurt sauce: Combine yogurt, cucumber, onion, black pepper, salt and red chili powder. Stir until smooth. Refrigerate until ready to serve.
- Heat oil in skillet over medium-high heat.
- Add chicken and all the marinade to skillet and cook for about 20 minutes or until chicken is cooked through. You may need to drain some liquid from the skillet while this cooks as you want to end up with only enough sauce to coat the chicken.
- To serve: You may cool the chicken pieces slightly before serving or keep them hot. You may warm the tortillas, if desired, too. Roll up the wrap with the chicken, yogurt sauce, lettuce or spinach leaves, chutney, rice, tomatoes, radishes and whatever else you like.

- In blender or food processor, process garlic, ginger, chopped onion, 2 tablespoons yogurt, oil, tomato paste, 1-3/4 teaspoons paprika, coriander and cumin until it forms a mostly smooth paste (there will be a few chunks, that’s OK). Place chicken in large zip-top bag; pour marinade over chicken. Seal bag and refrigerate at least 2 hours or up to overnight.
- Preheat oven to 400 degrees F. Remove chicken from marinade; discard marinade. Place chicken on rimmed baking pan and bake 18 to 20 minutes or until internal temperature reaches 165 degrees F, turning once. Transfer chicken to cutting board; let stand 5 minutes. Slice chicken crosswise into 1/2-inch pieces.
- Meanwhile, in small bowl, stir together cilantro, salt, and remaining 1/2 cup yogurt and 1/4 teaspoon paprika.

- Place chicken in a bowl. Add tandoori paste and sour cream. Mix to coat the chicken evenly, then cover and refrigerate for 30 mins.
- Heat oil in a frying pan over medium heat. Add the marinated chicken and cook, turning chicken pieces frequently, until marinade just starts to blacken and chicken is cooked through. Remove from heat and set aside.
- In a clean pan, heat the extra oil and cook each wrap (on 1 side only) on medium heat for a few minutes until slightly browned and crispy.
- Smear a small amount of tzatziki on cooked wraps, then top with rice, cooked chicken and coriander to your liking.
