MAPLE-GLAZED CHICKEN
This one-pan dish is filled with the flavors of fall. Maple syrup adds sweetness and depth to the tangy cider-infused glaze that coats tender pan-roasted chicken, apple wedges and shallots.

Steps:
- Pat the chicken dry and season all over with salt. Heat a large heavy skillet over high heat and add the olive oil. When the oil is hot, add the chicken skin-side down and cook, undisturbed, until the skin is browned and crisp, about 5 minutes.
- Turn the chicken and add the apples, shallots and sage to the skillet. Reduce the heat to medium high and cook until the chicken is browned on the bottom, 4 to 5 minutes. Transfer the chicken to a plate and continue to cook the apples and shallots, stirring, until golden, about 2 more minutes.
- Meanwhile, make the glaze: Mix the chicken broth, maple syrup, vinegar and 1/2 teaspoon salt in a small bowl. Add the mixture to the skillet with the apples and shallots and boil until reduced by about three-quarters, 2 to 3 minutes. Return the chicken to the skillet, turning to coat, until cooked through, about 2 more minutes.

Steps:
- Preheat a waffle iron to high. Combine the brown sugar, paprika, coriander, mustard powder, onion powder, garlic powder, cayenne, 1 1/2 teaspoons salt and 1/4 teaspoon black pepper in a small bowl. Reserve 1/2 teaspoon of the spice mixture for the syrup.
- Halve each chicken breast crosswise. Lightly pound the thicker pieces between 2 pieces of plastic wrap with the flat side of a meat mallet or heavy skillet so that they are the same thickness as the other pieces. Toss the chicken with the vegetable oil, then rub all over with the spice mixture.
- Generously brush the waffle iron with vegetable oil. Put a larger chicken piece in the center of each back quadrant of the waffle iron and a smaller piece in each of the front quadrants. Press the lid down to flatten the chicken and cook, pressing on the lid periodically, until the chicken is just cooked through, 3 to 5 minutes. Transfer to a platter and repeat with the remaining chicken.
- Meanwhile, combine the maple syrup, vinegar and the reserved 1/2 teaspoon spice mixture in a small saucepan over high heat. Cook until bubbling and thick, about 5 minutes. Drizzle over the chicken.

Steps:
- Place chicken in a 13 x 9 inch baking dish or a large, clean Ziploc bag.
- In a small bowl, combine the ketchup, maple syrup, liquid smoke, vinegar, mustard, salt and pepper. Mix well.
- Add ketchup mixture to the chicken and stir well to distribute ingredients.
- Marinate chicken overnight or at least 4 hours.
- Preheat oven to 350 degrees.
- First place half of the onion slices on bottom of baking dish, followed by the marinated chicken, then arrange the remaining onion slices on top. (The chicken can also be grilled). If baking in oven, place aluminum foil over chicken so that the chicken does not burn due to the high sugar content. Remove foil last ten minutes of baking.

- To begin with, using a chopping board, chop the ginger and garlic separately into fine pieces. Keep them aside until needed again.
- Next, in a deep bowl add soy sauce followed by black pepper, soy sauce, lemon juice, ginger, garlic and maple syrup. Mix well to combine the ingredients. Once done, add in the chicken breast in the prepared mixture.
- Using a clear wrap, cover the chicken bowl and transfer the bowl to your refrigerator. Leave it undisturbed for at least 2 hours.
- Once done, heat a griller on high heat and grease with refined oil. Then, transfer the chicken into the griller and grill until the chicken is brown in color. Simultaneously, take non-stick pan and heat it on medium flame. Pour the remaining soy sauce mixture ( see step-1) in the pan and simmer the mixture until the consistency thickens and the quantity is reduced to half.
