Steps:
- Preheat oven to 350 degrees.
- Saute mushrooms, leeks & salt in butter until softened.
- Add white wine & simmer until liquid is absorbed.
- In mixer bowl with wire whip attachment or by hand, combine mascarpone, cream cheese & garlic powder.
- Stir in shredded chicken & cilantro.
- Lay unrolled stack of phyllo sheets on flat surface, cover with large piece of saran wrap or parchment paper & then cover with damp kitchen towel.
- Remove one phyllo sheet to a flat surface & spray lightly with non-stick cooking spray. Sprinkle with about 1 teaspoon bread crumbs. Remove second sheet, lay over the first sheet, spray & sprinkle with bread crumbs. Repeat til you have 5 sheets total. (Re-cover the rest of the sheets each time to keep from drying out, but make sure to not get them wet with the damp towel).
- Using knife or pizza cutter, cut stack of layered sheets into 6 squares. Lay one stack of squares into a muffin cup, gently pushing down in the middle & around the sides. Repeat with remainder of squares.
- Repeat steps 3 & 4 until all of the phyllo sheets have been used.
- Fill each cup about 2/3 full with chicken & cheese mixture.
- Fill cups the last third with mushroom & leek mixture.
- Sprinkle the top of each cup with remaining breadcrumbs.
- Bake uncovered at 350 degrees for 25-30 minutes.
- Cool for 5 minutes before removing from muffin tin.

Steps:
- Sift flour and salt into a bowl.
- Gradually add water, stirring to make a stiff dough.
- Turn onto a pastry board. Place the oil in a bowl and spread a little of it on the palms of your hands. Knead the dough with a folding and turning motion, adding more oil to your hands when dough begins to stick. Continue until you have a smooth, elastic ball of dough and the oil is nearly all used.
- Then roll the ball of dough in the remaining oil to cover all sides, place a clean cloth over the bowl, and allow the dough to rest for two hours or more in a warm place away from drafts. A barely warm oven is satisfactory.
- Separate 1/4 of the dough and roll to 1/4 inch thickness on a pastry board rubbed with cornstarch. Cover with a clean cloth and let it rest for 10 minutes.
- Cover a table (cardtable or larger) with a smooth cloth and carefully lift dough onto it. Put your hands under the dough, palms down and gently stretch and pull the dough with the backs of your hands, working your way around the table, until the dough is as thin as tissue paper. Do not worry if it hangs down around the edges of the table, or if some holes appear, especially around the edges. Cut off the thicker edge and save the scraps.
- The phyllo is now ready to be cut into pieces with scissors if you wish to use it moist. If you prefer dry phyllo, allow it to sand until dry, about 10 minutes, then cut into desired sizes.
- The scraps of dough can be put into a moist bowl and kneaded and rolled again.
- When using phyllo dough, spray the sheets with olive oil or melted butter from a spritzer bottle. It's a fast, easy way to apply the fat in a very thin layer.

CHOCOLATE-NUT PHYLLO CUPS
A delectable dessert from BH&G. This is a Greek dessert, but using Mexican chocolate makes it fusion.

Steps:
- In a small heavy saucepan stir together honey and cornstarch. Add half and half or light cream. Cook and stir over medium heat until mixture is thickened and bubbly. Cook and stir for 2 more minutes . Remove from heat. Gradually stir some of the hot mixture into the egg yolks. Return all to saucepan. Bring to a gentle boil; reduce heat. Cook and stir for 2 minutes longer. Move to a small bowl. Cover surface with clear plastic wrap. Chill.
- In a bowl combine ground walnuts and granulated sugar. Set aside. Unfold phyllo. Place one sheet of phyllo on work surface; brush with some of the 3 tablespoons melted margarine or butter. Sprinkle evenly with one-third of the nut mixture. Repeat brushing, sprinkling, and layering 2 times. Cover with remaining sheet of phyllo; brush top with melted margarine or butter. Trim edges. Cut phyllo stack crosswise in fourths, and then lengthwise in thirds, to form twelve 4-inch squares.
- Gently press phyllo squares into twelve greased 2-1/2-inch muffin cups, allowing edges to extend upward.
- Bake in a 350*F. oven for 10-15 minutes or until golden. Cool completely on a wire rack. Carefully remove cups from pan. (If desired, cups may be baked ahead of time, then placed in a rigid plastic container and frozen up to 1 week. To thaw: let stand at room temperature 20-30 minutes.)
- To serve:
- In a small, heavy saucepan melt the 1 ounce chocolate and the 1 tablespoon margarine or butter over low heat, stirring until smooth, Remove from heat. Stir in the powdered sugar and the first 1/2 teaspoon vanilla. Add hot water, 1 teaspoon at a time, until it reaches drizzling consistency. Lightly drizzle melted chocolate on dessert plates. Sift cocoa powder over chocolate. (Chocolate can also be drizzled over edges and insides of cups.)
- In a small, chilled mixing bowl, beat the whipping cream and remaining 1/2 teaspoon vanilla with an electric mixer on medium speed until soft peaks form; fold in chilled egg yolk mixture. Spoon cream into each phyllo cup. Top each with grated chocolate, if desired.Sprinkle with cinnamon if desired. Serve immediately. Makes 12 servings.

Steps:
- Melt the first amount of butter in a large frying pan on medium then add onion, cooking for 5 to 10 min, stirring oftern until softened.
- Add apple, stir, and reduce heat to med-low, cooking for about 20 min, stirring occasionally until onion is very soft and golden - transfer to med bowl and cool for 10 minute.
- Add next 5 ingredients to bowl (chicken to pepper) and mix well.
- Lay pastry sheets on top of each other and cut in half crosswise, making 12 sheets.
- Place 1 sheet on work surface with long side closest to you, keeping remaining sheets covered with a damp tea towel to keep them from drying out.
- Brush sheet with melted butter and cut sheet in half crosswise. Put about 1 tbsp chicken mixture on lowest end of 1 half sheet, about an inch from the edge.
- Fold bottom edge over chicken mixture, then fold in sides, and roll up from the bottom, fully enclosing filling (kind of like wrapping a baby burrito!).
- Place seam side down on greased baking sheet with sides and cover with a separate damp towel.
- Repeat with remaining phyllo and chicken mixture.
- brush top of rolls with any remaining melted butter and bake at 400 degrees for about 15 minutes until pastry is golden and chicken is no longer pink!

- PREPARE THE COMPONENTS:
- Dredge chicken breasts in seasoned flour & brown in 2 T Olive Oil over med-high heat, 'til nicely browned, but not cooked through - Set aside
- Carmelize onions by sauteeing over low heat in 2 T olive oil, stirring occassionally, until soft, brown, and becoming sticky - Set Aside
- Saute chopped mushrooms in 2 T Olive Oil until soft; add Basil, Tarragon, Salt & Pepper to taste - Set aside
- ASSEMBLE THE PACKAGES:
- Lay a sheet of phyllo on counter - brush lightly with mixture of melted butter & olive oil (Keep phyllo tightly wrapped at all times until ready to use - if not, it will become dried-out & unusable almost immediately)
- Fold in half & brush top again
- Set a chicken breast at center toward bottom; spread 1/4 of onions, 1/4 of spinach, 1/4 of mushrooms, & 1/4 of sliced cheese on top
- fold phyllo in on both ends & bottom, and roll up like an envelope, brushin dry areas w/ oil-butter mixture as you go
- Repeat w/ remaining ingredients, & place all on baking sheet
- May be refrigerated or frozen at this point
- BAKE:
- In a 325 degree oven about 30 minutes, 'til golden
- Serve w/ salad & rice pilaf, and a good white wine such as Sauvignon Blanc

- Place 2 sheets of phyllo in centre of a 9-inch pie plate, allowing edges to overhang. Brush lightly with butter. Repeat twice.
- Spread bottom of phyllo with jam.
- Whisk together cheese, 3 tablespoons sugar, lemon rind and egg; pour over jam.
- Combine apples with remaining sugar and cinnamon. Arrange apples over top of cheese layer.

- Place 1 sheet of phyllo on work surface, keeping remainder covered with damp towel to prevent drying out.
- Brush sheet lightly with some of the butter.
- Top with second sheet; brush with butter.
- Repeat with third sheet.
- Cut lengthwise into 5 strips and crosswise into 6 strips to make 30 squares.
- Press each into lightly greased 1 ¾-inch mini-muffin or tart cup.
- Bake in centre of 400°F oven until golden, 4 to 5 minutes.
- Remove from pan; let cool on rack.

- Separate pasty sheets and spray on one side.
- Put two sheets on top of each other and spread on tomato paste.
- Sprinkle cheese onto them.
- Put other two sheets on top of each other and lay on top.
- Cut 1 inch fingers with a very sharp knife, the entire length of the pastry.
- Twist each finger so each length twists three to four times and lay on a baking sheet.
- Put in oven and cook to pastry's cooking directions.
- Yummy!
