LEMON MARINADE (CHICKEN)
Another good recipe from local news chef, Chef Walter. A nice change from the usual lemon pepper marinade on store shelves. This recipe is enough for 2 pounds of boneless skinless chicken breasts. Prep time is marinade time. Note: feel free to cut back or eliminate the salt in this marinade. Low-sodium soy sauce also works well for this. (Thanks for the tip, Nif!)

Steps:
- Mix everything together well. Pour into a shallow dish or large zip top bag.
- Add chicken. If using a dish, cover. Zip the bag if using a bag. Stash in the refrigerator for at least 2 - 3 hours, turning occasionally.
- Drain off the marinade and grill, or bake at 325 F for about an hour in a greased baking dish.

- Whisk together oil, lime juice, cumin, chili powder and garlic in a large, shallow dish to make a marinade.
- Arrange meat or fish in dish and rub all over with marinade, then cover and refrigerate for 2 to 3 hours, turning occasionally.
CHICKEN IN LIME AND CHILLI MARINADE
A tasty and healthy dish. Skinless breasts could be used in place of the tenderloins. Prep time includes 1 hour marinating time.

Steps:
- Combine all of the ingredients (except chicken) in a large bowl and whisk together.
- Add the chicken and stir to coat completely in marinade.
- Cover the bowl and refrigerate for at least 1 hour.
- Drain the chicken and discard marinade.
- Heat a frying pan over medium-high heat and spray with cooking oil.
- Add chicken and cook for about 3 minutes each side or until cooked through.
- This could also be cooked on the grill.
- Serve hot or cold over salad or rice noodles, sprinkled with the cilantro leaves and lime wedges on the side.

- In a medium bowl, mix soy sauce, vegetable oil, sherry, brown sugar, and garlic. Pour into a large resealable bag. Place chicken in the bag, and shake to coat. Marinate in the refrigerator at least 4 hours.

CHILI LIME CHICKEN
This recipe combines many of the spices that I grew up with and that have become a distinctive part of much of my cooking including dishes such as chili Colorado, posole, and Frontera™ style carne asada. I would describe this dish as more Tex-Mex or New Mexican than Mexican. Serve on a bed of rice or slice thinly for use in tacos or to top a green salad.

- Combine ancho chile powder, salt, garlic powder, onion powder, cumin, and chipotle powder in a medium glass or ceramic bowl. Whisk in canola oil and lime juice until well combined; thin with additional canola oil if mixture seems too thick.
- Arrange chicken in a glass or ceramic baking dish and pour the marinade over the chicken, covering it completely. Marinate in the refrigerator for 3 hours.
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Arrange the chicken on the baking sheet; do not crowd. Discard any excess marinade.
- Bake in the preheated oven until chicken is no longer pink in the centers, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and let stand for 5 to 6 minutes.

- Mix the dry spices together and set aside.
- Rinse the chicken and place the pieces in a ziploc bag.
- Pound the chicken with a metal mallet until it is all the same thickness.
- This makes cooking easier.
- Pour the juice from 4 limes over the chicken.
- Sprinkle the dry seasoning over the chicken to taste.
- Wimps usually only want 1/2 tsp per side of chicken.
- I then cooked the chicken for 5 1/2 minutes on a George Foreman grill.
- As each piece finished cooking and I removed it from the grill I squeezed the juice from 1/2 of a lime on it.
- YUMMY.

CHILI GASTRIQUE MARINADE FOR PORK

- Preheat oven to 400°F Bake chilies until fragrant and softened, about 5 minutes. Let cool for 2 minutes. Stem, seed and break into small pieces.
- Combine sugar and water in small saucepan, and set over high heat. Cook, without stirring, until mixture begins to turn gold around the edges of pan. Continue cooking, swirling pan, until mixture is light gold. (Do not let caramel darken, or it weill result in a bitter marinade.) Immediately add garlic and cook, stirring, for 30 seconds.
- Remove from heat, and stir in chilies. Stir in orange juice and vinegar; set over medium heat, and cook, stirring constantly, until syrupy, about 2 minutes. Use marinade immediately.
- If desired, turn marinade into finishing sauce: after removing meat, pour marinade into a nonreactive saucepan, and boil for 3 minutes. Brush on cooked meat just before serving.
