BEEF STIR-FRY WITH BROCCOLI & OYSTER SAUCE

Beef stir-fry with broccoli & oyster sauce image

Steps:

  • Heat a wok until smoking, pour in the oil then add beef. Stir-fry for 2 mins, then tip onto a plate. Add broccoli with a splash of water then cook until broccoli turns bright green.
  • Add the onion and stir-fry for 1 min, then add the garlic and cook for 1 min more. Pour in the oyster sauce and 125ml water. Bring to the boil and cook until reduced to a sticky sauce. Stir in the beef, along with any juices from the plate, then serve straight away.

STIR FRY CHILLI BEEF IN OYSTER SAUCE

Its a really tasty stir fry, full of lots of vegetables with enough chilli to kick up the flavour. I really started out making this yesterday by looking around to see what ingredients I had at the time. I had to scribble down what I had put in it before I forgot so I can make it again for ourselves but I am sure that you will find it enjoyable as well.

Stir Fry Chilli Beef in Oyster Sauce image

Steps:

  • Slice the steak up really thin and place in a bowl to marinade with the light soya sauce, oyster sauce and the five spice powder, cover and put it in the fridge.
  • Prepare the vegetables which can consist of a combination of Bean Shoots, Red Capsicum, Bok Choy, Chinese Leaf, Baby Corn, Spring Onions, asparagus, broccoli, celery. (the asparagus and broccoli need to be blanched for 2 minutes, drained and allowed to cool.
  • For the sauce mix the water, dark soya sauce, sesame oil and cornflour together.
  • Heat the wok, adding some of the oil - stir fry the vegetables along with the garlic, ginger and the chillies for a few minutes adding some salt if necessary.
  • Place in a hot dish and add more oil to the wok and stir fry the beef, taking care to stir frequently, add the sauce and as soon as it starts to thicken add the vegetables back into the wok, stir to coat.
  • Serve immediately either with fried rice or plain boiled noodles. Delicious.

  • In a medium bowl, stir 1 Tbsp. each soy sauce and sherry, 2 tsp. cornstarch, 1 tsp. sugar and a generous grind of pepper until sugar has dissolved. Stir in beef. Let stand for 15 minutes.
  • In a small bowl, whisk remaining 2 tsp. each soy sauce and sherry, 1 tsp. each cornstarch and sugar, broth, oyster sauce and sesame oil.
  • In a 12-inch nonstick skillet, heat 1 1/2 tsp. peanut oil over medium-high heat until very hot; swirl to coat skillet. Spread half of beef in a single layer. Cook, undisturbed, for 90 seconds to sear, then stir-fry for 30 seconds. Transfer to a plate. Add another 1 1/2 tsp. peanut oil; repeat with remaining beef.
  • Add 2 tsp. peanut oil and broccoli to skillet; stir-fry for 1 minute. Make a well in center and add remaining 1 tsp. peanut oil, scallion, garlic, ginger and red pepper flakes. Stir-fry until just fragrant, about 30 seconds. Add 1/3 cup water and cover skillet; steam until broccoli is just crisp-tender, about 3 minutes.
