CHINESE GREEN BEANS
I love the green beans found on Chinese Restaurant buffets! They are the bomb! I could easily pay for the entire buffet and only eat the green beans! I found this recipe while searching for the technique online as I was told the secret was that they were Dry-Fried. Oh Yum! Thanks to Ronda Parkenson for the recipe I adapted. I found that I did not need as much oil when making this recipe....so i reduced the oil amounts to what I used, if it does not look like enough for you, feel free to add more.

Steps:
- Wash the green beans and pat dry with paper towel. Cut ends on the diagonal leaving beans long.
- Combine the sauce ingredients and set aside.
- Warm a wok over medium heat and add 2 tablespoons peanut oil. Drizzle oil down the sides of the wok.
- Once the oil is heated, add the green beans. Stir-fry for about 10 minutes, or until the skins pucker and turn brown and the green beans are tender (NOT mushy). Remove the beans from the wok.
- Over medium-high heat, heat 1 teaspoon sesame oil. Once the oil is hot, add the chopped garlic, ginger and scallions. Stir-fry briefly for a few seconds until aromatic. Add the chili paste or dried chili peppers.
- Add the sauce and the green beans to the wok. Toss and serve hot.

SPICY SZECHUAN GREEN BEANS
I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.

- Combine green beans and water in a skillet over medium-high heat. Cover and cook, stirring occasionally, until beans are tender crisp, 4 to 5 minutes. Add ginger, garlic, and sesame oil; cook, stirring frequently, until garlic is lightly browned, 1 to 2 minutes.
- Mix soy sauce, rice vinegar, sugar, and red pepper flakes together in a small bowl. Pour over beans and cook until sauce thickens enough to coat beans, 3 to 5 minutes.

- In a large pan or wok, heat the oil over high. Fry the string beans until they start blistering. Remove the string beans.
- In the same pan or wok, add the garlic, ginger, and scallions. Fry until fragrant.
- Add the mushrooms and ground pork. Fry until the pork is mostly done. Stir in the the dried red chilies and chili paste.
- Add the string beans back the pan/wok. Toss to combine everything. Add the soy sauce, rice wine, and a dash of white pepper. Serve!

- Wash beans, trim ends and remove strings.
- Arrange beans in a vegetable steamer (or a colander that will sit nicely in saucepan), and place over boiling water.
- Cover and steam 5 minutes.
- Drain and plunge into cold water, drain again.
- Coat a large nonstick skillet (or wok) with cooking spray or peanut oil and heat until hot.
- Add gingerroot and garlic and saute 30 secs.
- Add beans, saute 5 minutes.

Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

- Rinse green beans and trim ends off. Leave beans in long lengths.
- Blanche beans for 4 minutes in hot water. Immediately immerse into bowl of ice water to stop cooking and retain bright color. Remove and pat dry.
- In a small bowl, mix all remaining ingredients except butter. Place beans in a saucepan with butter. Add mixture and sautee green beans for 2 minutes. Shake pan to gently let beans roll.

- Melt butter in a sauté pan; add the lemon juice and garlic.
- Add the green beans and salt and pepper. Cook over medium-low heat until almost tender.
- You can cover if desired, but don't cook until mushy unless you like your green beans that way.
- Remove from pan and serve.
- Note: You can substitute fresh asparagus for the beans.
