- Preheat oven to 350 degrees. Line baking sheet with parchment paper or foil; lightly coat with cooking spray (if using nonstick pans or liners, do not use cooking spray).
- In large bowl, toss coconut with sugar until evenly coated. In a pan melt the chocolate; let cool slightly. In small bowl, combine egg whites, chocolate, vanilla and salt until blended. Add to coconut mixture; blend well with spatula.
- On prepared baking sheet, form heaping table-spoonfuls of mixture into 15 mounds, 2 inches apart. Bake 15 minutes or until bottoms are golden and tops start to brown (centers will be slightly soft). Let cool 10 minutes on baking sheet; remove with spatula to wire rack; let cool completely on rack. Best served the same day, but can be stored overnight in airtight container.

- To Make Filling: Beat cream cheese, 1/3 cup sugar and vanilla until soft and smooth. Add coconut and nuts. Chill.
- To Make Dough: Beat butter until softened. Add half of flour. Then add 1 cup sugar, cocoa, egg, milk, and baking soda. Beat until combined. Work in the rest of the flour. Chill dough until firm enough to roll.
- Place dough between 2 sheets of waxed paper. With rolling pin roll dough in a rectangle 14 x 6 inches. Remove top sheet of waxed paper.
- Remove filling from refrigerator and shape into a roll 14 inches long. Place filling on top of dough. Start on one end and roll dough around filling (like rolling up a rug) . Moisten and pinch edges together. Cut roll in half. Wrap in waxed paper and refrigerate for two days.
- Cut into 1/4 inch slices (using a very sharp knife or waxed dental floss). Put on greased cookie sheets and bake at 375 degrees F (190 degrees C) for 8 to 10 minutes. Cool on sheet for about 1 minute and then finish cooling on racks.

- Preheat the oven to 300 degrees F (150 degrees C). Grease a baking sheet or line with parchment paper.
- Beat egg whites in a glass, metal, or ceramic bowl until foamy. Continue beating until stiff peaks form.
- Combine marzipan with 1/2 of the confectioners' sugar and rub with your fingers until mixture resembles bread crumbs. Add coconut, remaining confectioners' sugar, lemon zest, and rum. Mix well. Fold in stiff egg whites.
- Using 2 teaspoons, drop small dollops of mixture onto the prepared baking sheet. Sprinkle with sugar.
- Bake in the preheated oven until the macaroons are golden but soft to the touch, about 20 minutes. Transfer to a cooling rack and cool completely, 30 minutes to 1 hour.
- Place 3/4 of the chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat and stir in remaining chocolate until melted.
- Dip 1/3 of each cooled macaroon into the melted chocolate. Set macaroons on waxed paper until chocolate has set. Store the macaroons in an airtight container, with waxed paper between the layers.

- Preheat oven to 350.
- Combine coconut, 1 teaspoon vanilla extract and salt in a medium bowl.
- Mix in sweetened condensed milk to form a thick paste and coat all coconut.
- Beat egg whites with 1 teaspoon cream of tartar until stiff.
- Fold egg whites into coconut mixture.
- Drop by rounded teaspoons onto parchment paper on cookie sheet, about 2 inches apart.
- Flatten slightly (trust me, it will make it alot easier when you chocolate coat them).
- Bake 8-10 minutes or until tops begin to turn light brown.
- Remove from oven and let cool on pan about 2 minutes.
- Remove from pan onto wire rack and let cool completely.
- Meanwhile, prepare glaze by melting chocolate chips.
- Add vanilla extract and powdered sugar to melted chocolate
- Add water until chocolate mixture becomes a good consistency to dip the macaroons in (the idea is to be not too thin and not too thick; it should stick to the cookies but not be too thick).
- To coat macaroons, let cool completely.
- Dip the flat bottoms of macaroons into chocolate mixture then place them upside down on wire rack.
- Let the bottom coating cool either at room temperature, or you can stick em in the fridge to speed up the process.
- Once the coating has set on the bottoms, coat the tops and place back on wire rack with set bottom on the bottom.
- Allow chocolate to set.
CHOCOLATE CANDY MACAROON COOKIES
This is a divine little treat! You can use just about any small candies, chocolate chips, or even gumdrop minis (okay, so that's not chocolate, but still yummy). Makes a great Easter treat to add to baskets or decorate a serving table. Also try this with candy bars chopped in small pieces. Where's that Snickers bar??? - Preheat oven to 350 degrees Fahrenheit.
- Combine flaked coconut, sweetened condensed milk, almond extract, and salt in a large mixing bowl.

- Using your palms, surround each M&M candy piece firmly with coconut mixture.

COCONUT MACAROON-FILLED CHOCOLATE COOKIES (BETTER THAN MOUNDS)
I searched for recipe to copy the yummy cookie I purchased at the bakery at Uncle John's Cider Mill in St. John's, Michigan; finally, I realized I'd have to create my recipe. It takes a little extra effort to bake up a couple dozen of these enormous, bakery-worthy cookies; but the end result of this two-in-one cookie is worth it.

- First, make the coconut macaroon filling:.
- With two racks in the middle of your oven, preheat the oven to 325.
- Spray two baking sheets or parchment paper with non-stick cooking spray.
- Beat egg whites and salt together until soft peaks form.
- Slowly add in sugar and beat until stiff, glossy peaks are present.
- Beat in vanilla.
- Add half the coconut and sprinkle with the flour.
- Add the rest of the coconut and gently fold into the egg white meringue.
- Using a 3/4 ounce scoop (almost 2 TBSP), drop onto baking sheets, spaced about 2 inches apart.
- Bake about 8-9 minutes, until just set. These will be under-baked and not brown at all. It's okay, because will be the filling and will finish baking inside the chocolate cookie.
- Now, it's time to make the chocolate cookie dough, while the macaroons are cooling:.
- Increase the oven temperature to 350.
- In a mixer, cream together the butter and sugars.
- Add the eggs, one at a time.
- Now add the vanilla.
- Blend in the cocoa, 1/2 cup at a time.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Mix in the flour mixture to the dough about a cup at a time, until well combined.
- Place fresh sheets of parchment paper (ungreased) on your cookie sheets.
- Using a 1 ounce scoop (2 Tablespoons), drop 6 mounds of dough onto each cookie sheet, spaced widely apart. These will be very big cookies.
- Spray the back of a teaspoon with non-stick cooking spray and use the back of that spoon to make a nest out of the dough for each macaroon.
- Set a macaroon on top of each chocolate cookie "nest".
- Place another 1 ounce scoop of chocolate cookie dough on top of the macaroon layer. Now there are three cookie layers.
- Spread and flatten the dough, so that the macaroon is completely covered.
- Bake in the upper half of the oven for 13 minutes. Cookies may look a little under-baked when you remove them from the oven, but they will set up and dry, as they cool.
- Immediately, slide the parchment paper with the hot cookies onto a cooling rack (otherwise, they will continue to bake and burn on the bottom). Cool for at least 5 minutes.
