PEACH PIE WITH CANNED PEACHES
Steps:
- Put 1/2 cup sugar and 1 Tbsp. flour in bottom crust. Place peaches on top. Sprinkle on remaining flour and sugar.
- Put on second crust and seal. Cut slits in top.
- Bake at 425°F for 10 minutes. Reduce heat to 350°F for 30 minutes.

Steps:
- Prepare large pot with boiling water.
- Make an x in each peach bottom.
- Boil peaches, in batches, for approximately 2 minutes.
- Remove peaches from boiling water & put into water/ice bath with lemon juice (to prevent discoloration).
- Peel & pit peaches. (Set aside skins & pits for jelly later if you want).
- Place peeled/pitted peaches back into water/ice bath.
- Sterilise 11 pint jars by washing & then baking at 225 degrees for 25 minutes or boiling for 10 minutes. Heat jar lids & rings in pot of simmering water.
- Fill canning pot with water & put onto boil.
- Combine sugar with 6 cups water & heat. Allow to simmer.
- Pack peach halves into jars, cut side down. This may require using chopsticks or forks to flip the fruit over. Pack the peaches in as tightly as you can manage without damaging them.
- Pour 1/4 cup bourbon into jars.
- Fill the rest of the way with your syrup, leaving 1/2" of headspace.
- Clean jar rims with a damp cloth & place lids & rings on finger tight.
- Place jars into canning pot & bring water back to a boil.
- Boil for 25 minutes.
- Allow jars to set in canner once time is up to prevent siphoning.
- Remove from canner, allow to cool for 24 hours, open & enjoy or store for up to a year.

This is a quick canning recipe for a lug of peaches, about 20 to 24. I like to take the juice from the jar after opening and make a gelatin dessert.

- In a large stockpot bring about 6 quarts water to boil, drop in peaches for about 2 minutes, with slotted spoon take out and drop into sink of cold water. Peel the skin from the peach with your hands, cut in half,pit,then quarters.
- In another large stockpot have ice water and lemon juice. Place the prepared peaches in the lemon juice water.
- Wash 12 to 14 pint jars. Place in a pan upside down with hot water in the oven at 200 degrees. Make sure seals are also in hot water.
- Combine orange juice, pineapple juice, sugar and cinnamon sticks.Heat and stir so sugar melts and does not burn.Add Amaretto. Drain peaches and add to hot syrup. Cook about five minutes. Hot pack peaches into jars, put one cinnamon stick in each jar. Use a jar funnel to pour syrup into jar.Make sure you leave 1/2 inch head room in the jar. Wipe the rim of each jar clean with a hot sterile cloth.
- Apply lid seal and screwbands. Place in a hot water bath for 20 minutes or use a pressure cooker canner and follow directions for your specific pressure cooker.Take out and cool on a towel covered counter. Keep out of drafts.Make sure each jar is sealed, seal will be dented in when sealed. If not sealed, reprocess.
- Store on a cool dark shelve or in a canning room.About two hours before serving,.
- open the jar,drain the peaches and chill.
- PEACH JUICE GELATIN DESSERT.
- Reserve the cold juice from the jar to measure at least 3/4 cup add water to make 1 cup place in saucepan, add 7-UP, stir in one packet of unflavored gelatin, stir until dissolved, heat and pour into bowl and chill or pour into parfait glasses and chill.

- Sterilize Jars: Wash jars with warm water and dish soap. Rinse with scalding hot water. Line the base of a large stock pot with either a canning rack ($15; Amazon), or make your own by lining the bottom with canning jar rings.
- Blanch and Shock Peaches: Bring a large stock pot full of water to a boil. Fill a large bowl with ice water. Cut a small X on the bottom of each peach and add them to the boiling water.
- Peel and Slice Peaches: Person peeling peaches with pairing knife over cutting board. Peel the peaches using either your fingernail or a small paring knife, pulling the skin from the X you created earlier.
- Add to Jars: Divide the peaches between your jars (about one jar per pound of peaches). Fill the jars, leaving about one inch of space at the top.
- Make Simple Syrup: In another medium pot, bring 8 cups of water to a simmer. Add sugar and stir until dissolved.
- Add Syrup: Person holding ruler up to top of jar of peaches. Pour the simple syrup over the peaches in each jar. Leave about ¼ to ¾ of an inch of space from the top of the jar.
- Seal: Person placing can of peaches into water bath canner using tongs. Add your canning rack to a large stock pot. Fill the pot about halfway with water, or until the tops of the jars are covered.
- Remove Jars and Cool: Place a large dish towel or rag on the countertop. After the time is up, use the tongs to carefully lift the jars and place them on the towel.
- Test Sealing: Close up of lid on jar of peaches with label. Once the jars have cooled, make sure they are properly sealed. To do so, simply press on the center of the lid.
