BANANA-CHOCOLATE CHIP CAKE
This cake is so good it should be illegal! It's very easy to make, just throw all the ingredients into the mixing bowl and let the beaters do the work. I got this from Betty Crocker's Cookbook 1978, my husband's kitchen bible from his bachelor days.

Steps:
- Heat oven to 350 degrees. Grease and flour oblong pan, 9x13x2 inches.
- Beat all ingredients, except chocolate chips, in large mixer bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes.
- Stir in chocolate chips by hand.
- Pour batter into prepared pan.
- Bake until toothpick or cake tester inserted in center comes out clean, approximately 45 minutes.
- Cool cake completely and frost with Vanilla Butter Frosting.
- To make VANILLA BUTTER FROSTING:.
- Blend powdered sugar into butter.
- Stir in vanilla and milk.
- Beat until frosting is smooth and of spreading consistency.
- Hint #1. For best results, be sure the bananas you use for cakes are fully ripened. If you use firm bananas, the cake will not have the fragrance or the flavor.
- Hint #2. To sour milk: Add 1 tablespoon white vinegar or lemon juice to 1 cup of milk. For this recipe, use 2 teaspoons vinegar or lemon juice for 2/3 cup milk.
- Hint #3. When it comes to homemade frosting, I usually increase the recipe by one-half; so in this case, I used 4 ½ cups powdered sugar, 7 ½ tablespoons butter, and 2 ¼ teaspoons vanilla (using the same measuring spoons, 1 ½ teaspoons first, and then ½ and ¼ teaspoons vanilla).

- Process butter, sugar, eggs and vanilla for 2 minutes, scraping down bowl once or twice.
- While machine is running, drop chunks of bananas through the feed tube. Process until blended ( I mash my bananas before hand).
- Meanwhile, dissolve baking soda in yoghurt or sour cream. Let is stand for l to two minutes Yoghurt will nearly double in size, so use a 2 Celsius measuring cup.
- Add to batter and process for 3 seconds.
- Add flour and baking powder.
- Process with 4 quick on/off turns, just until flour mixture disappears.
- Add remaining ingredients.
- Bake in 2 greased and floured 8 inches pans for 25-30 minutes at 350°F
- (I also use waxed paper on the bottom of the pans - just cut a circle for the bottom - it makes it easier to take the cake out ) or until cake tester come out clean.
- Cool for 10 minute
- Remove from pan.
- Cool before icing.
- Butter Icing.

- 2-3 tablespoons hot milk or cream.

- Preheat oven to 275.
- Line a 9 x 13 pan with parchment paper.
- In a small bowl, mix mashed banana and lemon juice. Set aside.
- In a medium bowl, mix flour, baking soda, and salt. Set aside.
- In a large bowl, beat together butter and sugar until fluffy and consistent.
- Beat eggs into the butter/sugar mixture one at a time.
- Add 2 tsp vanilla.
- Alternate between the flour mixture and buttermilk, adding a little at a time of each to the butter/sugar mixture.
- Finally, mix the banana mixture into the rest.
- Pour batter into prepared pan and bake for 1 hr and 15 min or until toothpick inserted into center comes out clean.
- Put cake directly into the freezer from the oven and keep it there at least 45 minutes. I have kept it in there overnight before, and it turned out wonderfully moist.
- For the frosting, beat cream cheese and butter together until smooth and consistent.
- Add powdered sugar, cocoa, salt, cream, and vanilla. Mix until creamy and consistent.
- Stir in mini chocolate chips until consistent. Coat the cake evenly.
- I iced the top of the entire cake, cut it in half the short way, layered one side on top of the other, then covered the rest of the exposed cake with the remaining frosting.
- The more ripe the bananas, the better the cake. Use the brown ones you're about to have to throw out.
- My husband asked me to re-create the Havana Banana Chocolate Chip Cake they serve at Cheeseburgers in Paradise. I borrowed from the base of recipe 67256 and frosting recipe 192894. Been awhile, so I don't know if it was exactly like the Havana Banana, but it made everyone here very happy. Thanks!

- Preheat the oven to 350 degrees F.
- Sift together the flour, baking soda and salt in a medium bowl. Mix together the vanilla, eggs and orange juice in a measuring cup or small bowl. - Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.
- In a large bowl, mash the bananas with the back of a fork until only a few lumps remain. Add the egg and mix until smooth. Using the fork, whisk in the almond milk, sugar, almond butter, coconut oil, vanilla and salt until smooth and incorporated. Add the almond flour, rice flour, baking soda and cinnamon and stir until combined with a rubber spatula. Stir in the chocolate chips.
- Pour the batter into the prepared loaf pan and sprinkle the walnuts on top. BANANA CHOCOLATE CHIP CAKE
Steps:
- Spray the bottom of a 1 1/2-quart souffle dish with cooking spray. Line the bottom of the souffle dish with parchment paper and give a quick spray with cooking spray; set aside.
- Make a foil ring 1-inch thick for the souffle dish to sit on inside a 5-quart slow cooker.
- In a medium bowl, combine the bananas with the hazelnut liqueur. Add the muffin mix, evaporated milk, oil, vanilla extract, cinnamon, chocolate chips and egg. Stir together until just blended.
- Transfer to the prepared souffle dish. Place the dish on top of the foil ring in the slow cooker. Lay 8 paper towels over top of the slow cooker bowl and secure with the lid. (This helps to trap steam.) Cook on LOW setting for 4 to 5 hours.
- Remove the cake and allow to cool completely.
- Cut the cake in half horizontally. Stir the rum extract into the cream cheese frosting and frost in between the layers and outside of the cake with the mixture. Garnish the sides of cake with chopped walnuts. Slice and serve.

- Preheat the oven to 350 degrees F and line a 9-by-13-inch baking pan (see Cook's Note) with aluminum foil, leaving a 2-inch overhang on the two longer sides. Lightly spray the foil with nonstick cooking spray.

- For the candied banana chips, warm the maple syrup in a medium nonstick skillet over medium heat until it just starts bubbling. Add the banana chips and cook, tossing and stirring frequently with a rubber spatula, until the chips have absorbed almost all the maple syrup and are browned in spots, 3 to 4 minutes. Immediately transfer the banana chips to a baking sheet, spread in an even layer and cool completely. Once cool, roughly chop.

After first trying this years ago my 2nd son declared -who needs banana bread?! - and this became our favorite choice for doing away with overripe bananas. The recipe originally had an optional chocolate glaze, I've always skipped it and just added a light dusting of confectionary sugar. This is a pretty sturdy cake which makes it great for picnics, potlucks and lunch bags - the same son recently took 1/2 a cake with him for the drive back to S.CA! An extra note - seeing some of the comments - this is not a tall cake it only rises a littel more than half way up the pan. Ovens are different - go with a shorter cooking time and check to see if needs more.

- Preheat oven to 350 degrees, grease or spray a bundt pan and lightly dust with cocoa powder.
- Mix together dry ingredients, set aside.

- Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the sugar, flour, bicarb, cocoa and chocolate in a large bowl.
- Mash the bananas in a bowl and stir in the whole egg plus 2 yolks, followed by the oil and milk. Beat the egg whites until stiff. Quickly stir the wet banana mixture into the dry ingredients, stir in a quarter of the egg whites to loosen the mixture, then gently fold in the rest. Gently scrape into the tin and bake for 1 hr 10-15 mins, or until a skewer inserted comes out clean.
