Steps:
- Sift together flour, cocoa, salt, and cinnamon into a bowl. With an electric mixer, beat butter and confectioners' sugar on medium-high speed until pale and fluffy, about 3 minutes. Mix in egg and vanilla. Reduce speed to low. Gradually mix in flour mixture. Wrap dough in plastic wrap. Chill 1 hour.
- Preheat oven to 350 degrees. On a lightly floured work surface, roll out dough to 1/8 inch thick. Transfer to a parchment-lined baking sheet. Freeze 15 minutes.
- Using a 2- or 3-inch X- or O-shaped cookie cutter, quickly cut out shapes from dough (if dough begins to soften, return to freezer for 3 to 5 minutes). Reroll scraps once and cut out more shapes.
- Transfer shapes to baking sheets, spacing them 2 inches apart. Freeze until firm, about 15 minutes. Brush flour from shapes. Sprinkle with sanding sugar. Bake until crisp, rotating sheets halfway through, about 8 minutes. Let cool completely on sheets on wire racks. Cookies can be stored in an airtight container at room temperature for up to 1 week.

- Preheat the oven to 350°F. Line two cookie sheets with parchment paper and set aside. Combine the flour, cocoa powder, baking soda, and salt in a small bowl. Gently stir with a whisk to evenly distribute. Set aside. Fit a stand mixer with a paddle attachment and cream the butter, both sugars, and vanilla until light and creamy. Add the eggs and mix until completely incorporated. Scrape down the sides of the bowl. Add the dry ingredients and mix on low speed until the ingredients are just combined. Use a tablespoon to place the dough onto the prepared cookie sheets. Do not flatten the cookie dough balls. Bake for 12 to 14 minutes. Do not over-bake. Remove the cookies from the oven and let them cool for 5 minutes. Then, gently press a Kiss into the middle of each cookie. Cool for 15 to 20 more minutes then serve warm. Or, let the cookies cool completely before serving or storing.

Steps:
- Over low heat melt unsweetened chocoate and set aside to cool.
- Combine eggs, sugar, melted chocolate, vanilla, and oil.
- Gradually add flour and baking powder (Dough will be a stiff brownie-like mixture).
- Chill for two hours.
- Shape dough into small balls (I use a rounded greased measuring spoon or small cookie scoop) and roll into powdered sugar.
- Place on a ungreased cookie sheet ( although I grease all my cookie pans).
- Bake at 375 degrees for 8-10 minutes, or until edges are set and tops are cracked.
- Place an unwrapped Hershey's Hug in the center (don't push all the way to bottom).

- Position racks in the center and top third of the oven and preheat to 350 degrees F. Line two large baking sheets with parchment paper.
- Sift the flour, baking soda, and salt into a medium bowl. Set aside.
- In the bowl of a heavy-duty stand mixer fitted with the paddle attachment, cream the butter, brown sugar and granulated sugar on medium speed until well blended, about 2 minutes; scrape down the bowl.
- Beat the eggs and vanilla in a small bowl. Add to the butter mixture and blend well; scrape the bowl again. On low speed, add the flour mixture and beat until just mixed; scrape down the bowl. Add the chocolate and optional nuts and mix until incorporated into the dough.
- Drop rounded tablespoons of the dough onto the prepared sheets, spacing them about 2 inches apart. Bake, switching the position of the sheets from top to bottom and front to back halfway through baking, until the cookies are golden brown but the centers seem slightly underdone, about 13 minutes. Do not overbake or the cookies will be crisp throughout instead of chewy. Cool for a few minutes on the baking sheets, then transfer to wire cooling racks to cool completely. The cookies will crinkle as they cool. (Store at room temperature in airtight containers for up to 1 week.)
TOP SECRET CHOCOLATE COOKIES

- In a large bowl, add the butter and sugar and cream together with a hand mixer. Add the eggs and vanilla extract to the creamed mixture and mix until combined. In a medium bowl, mix the cocoa powder, flour, baking soda, and salt. Slowly add the dry ingredients and continue mixing until incorporated.
- Roll the dough into 2 logs that are about 2-inches high and 1-foot long. Wrap them in waxed paper and place in the refrigerator for 2 hours.
- Preheat oven to 350 degrees F.
- Once thoroughly chilled, slice the cookies into 1/2-inch thick rounds and cover with sanding sugar. Place on a parchment paper lined cookie sheet and bake for 10 minutes.
- Remove to a wire rack to cool.

- In a large bowl, cream margarine with sugar and vanilla until light and fluffy. Mix in flour and walnuts, beating on low speed of an electric mixer until well mixed. Cover, and refrigerate dough for 2 hours, or until firm enough to handle.
- Preheat oven to 375 degrees F (190 degrees C).
- Remove wrappers from chocolate kisses. Shape approximately 1 tablespoon of dough around each chocolate kiss; be sure to cover chocolate completely. Place cookies on an ungreased cookie sheet.

- Heat oven to 375 degrees F; you'll need a baking sheet.
- Place chocolate and butter in a small microwave-safe bowl.
- Microwave on high 1-2 minutes, until melted.
- Stir until well blended and smooth.
- Stir together gingerbread mix, chocolate mixture, flour and hot water in a large bowl with rubber spatula until well blended.
- Put sugar in a small bowl.
- With floured hands, shape scant tablespoons of dough into 1-inch balls.
- Roll balls in sugar to coat.
- Place 1 inch apart on ungreased baking sheet.
- Bake 10-12 minutes until tops crack slightly but are still soft to the touch.
- Place baking sheet on a wire rack.
