HALLOUMI KEBABS WITH THYME & LEMON BASTE

- Halve the courgettes lengthways, then thickly slice. Cut the onion into wedges and separate into pieces. Thread the halloumi, cherry tomatoes, courgettes and onion onto eight skewers. Cover and chill the kebabs until you are ready to cook (You can do this up to half a day ahead.)
- To make the baste, mix together the olive oil, lemon juice, thyme, mustard and seasoning. (This can be made ahead and chilled too.)
- Preheat the barbecue or grill and arrange the kebabs on the rack. Brush with the baste, stirring it first to make sure the ingredients are blended. Cook for 4-5 minutes, turning often, until the cheese begins to turn golden and the vegetables are just tender. Serve while still hot with warm pitta bread.

HALLOUMI AND COUSCOUS CAKES
Haloumi and couscous cakes flavoured with lemon zest and parsley, and served with a simple refreshing baby spinach salad with slices of smoked salmon, or with your favourite salad. This recipe is from the November/December 2005 issue of the 'donna hay magazine: turn simple into special'. I haven't yet made these cakes; I just bought the magazine today! But for me this recipe had that instant must-be-tried-soon appeal! In posting the recipe, I have separated the cakes from the side salad (I have included details of the salad in the Directions) as I thought it would be more useful for those watching fat content or calories to know the nutritional information for the cakes. In posting the recipe, I have reduced the oil used in cooking the cakes from 2 tablespoons to 11/2 tablespoons. The oil could, of course, be considerably more reduced if the cakes were cooked in the oven on trays. Donna Hay is a well-known and popular Australian chef.

- Place the couscous, haloumi, lemon zest and parsley in a food processor and process for 1 minute or until the mixture resembles fine breadcrumbs; then shape 1/4 cups of the couscous mixture into round cakes.
- Heat a non-stick pan over a medium heat; add the oil; cook the cakes in batches for 2-3 minutes each side or until golden; transfer the finished cakes onto a plate lined with absorbent paper towelling, and keep warm while you cook the remaining cakes.
- SERVING SUGGESTION: Serve the haloumi and couscous cakes with baby spinach leaves and slices of smoked salmon with lemon slices. If you like a dressing on your salad, Donna Hay combines 2 tablespoons of white wine vinegar with 1 tablespoon of olive oil and tosses the smoked salmon slices and baby spinach leaves in the dressing to combine, and serves it with lemon wedges.
- NOTES: Suggested quantities - in the original recipe - for the side salad: 7 ounces (200g) smoked salmon slices, 21/2 (70g) ounces baby spinach leaves. On Donna Hay's website - http://www.donnahay.com.au/ - is a conversion table and a list of commonly used ingredients - and what they are generally called in Australia and America. In many cases, I think we actually use what she has said is the American name and in some cases, the recipes on Zaar use what she has said is the Australian name! Curious! But some of these "translations" of terms and names could well be useful!

- Prepare dressing by heating balsamic vinegar in a small saucepan over medium heat.
- Add sugar and stir until it caramelises and mixture changes to a darker colour.
- Take off heat and set aside to cool for 1-2 minutes.
- Whisk in olive oil and add seasoning to taste.
- Unwrap the Halloumi cheese and cut into six slices.
- Season flour with salt and pepper and coat pieces of Halloumi with flour on both sides.
- Heat Oil in a frying pan until very hot and add Halloumi pieces.
- Fry one or two minutes on each side until golden brown.
- Pour half of dressing on warm plate until it covers the whole plate evenly.
- Add cheese pour the rest of the dressing on top.
- Garnish with sprigs of parsley and serve with hot pitta bread.
GRILLED PORK CHOPS WITH PLUMS, HALLOUMI, AND LEMON
If you like feta, you should get to know Halloumi, a Cypriot cheese sold at Greek markets, specialty food stores, and some supermarkets. Smooth, oiled grill grates will keep the cheese from sticking. And keep a close eye on the plums as they cook; you want them to be soft and just slightly jammy, not mushy.

- Prepare a grill for medium-high heat; oil grate. Combine honey and 2 Tbsp. oil in a large resealable plastic bag. Season pork chops generously with salt and pepper and add to bag. Seal, pressing out air, and massage chops to coat.
- Place plums, lemon, and Halloumi on a rimmed baking sheet and drizzle with 2 Tbsp. oil; toss to coat. Season plums and lemon with salt, then season everything with pepper.
- Grill pork over medium-high, turning occasionally with tongs and moving around if needed to prevent flare-ups, until an instant-read thermometer inserted into the center (about 1/2" from the bone) registers 130°F, 6-8 minutes. Transfer to a cutting board and let rest 10 minutes.
- Meanwhile, grill plums, lemon (cut side down), and Halloumi, turning plums and cheese once or twice, until grill marks appear and plums start to release their juices, about 4 minutes. Transfer plums, lemon, and Halloumi to cutting board with pork and let cool 1 minute. Slice each plum half into 3 wedges and tear Halloumi into 1" pieces.
- Cut pork away from bone and slice 1/2" thick. Arrange meat on plates; discard bones. Spoon plums and Halloumi around and on top of meat, dividing evenly. Squeeze juice from grilled lemon over; season with more salt and pepper. Top with oregano, sprinkle with some Aleppo-style pepper, and drizzle with a little oil.

- Prepare a gas grill for direct-heat cooking over moderately high heat.
- Cut 8 thin slices from lemons, then squeeze enough juice from remainder to measure 2 tablespoons and put in a bowl.
- Halve cheese diagonally, then cut each triangle, cut side down, into 1/3-inch-thick slices.
- Mince garlic and mash to a paste with a pinch of salt using side of a large heavy knife, then add to lemon juice. Whisk in salt and sugar until dissolved, then add 1/4 cup oil, whisking until combined.
- Separately toss lemon slices and cheese each with 1/2 tablespoon dressing.
- Brush both sides of bread with remaining 2 tablespoons oil.
- Grill bread, cheese, and lemon slices on grill rack, covered, turning over once (use a metal spatula to scrape under cheese to loosen before turning), until bread is toasted (2 to 3 minutes total), grill marks appear on cheese (3 to 4 minutes total), and lemons begin to wilt (4 to 6 minutes total).

- Slice leeks fairly finely. Cut the cheese into slice about 8mm thick then cut each slice in half to make squarish pieces.
- Heat the oil in a frying pan, put in the cheese and fry for 1-2 minutes until golden brown on one side, then flip the pieces over and fry the other side.
- Drain the cheese on kitchen paper and leave on one side.
- Put the leeks in the frying pan and stir-fry for about 5 minutes or until they are just tender. Then add the cumin seeds and stir for a moment or two longer. Add the lime juice and season with salt and pepper.
- Put the cheese back into the pan with the leeks and heat through for a few minutes.
- Serve on warm plates.
