CHOCOLATE-LEMON BARS
Classic lemon bar cookies get a flavor twist when the lemon filling is baked over a delectable crust made with chocolate wafer cookie crumbs.

Steps:
- Preheat oven to 350°F. Mix wafer crumbs and margarine; press firmly onto bottom of 8-inch square baking pan. Bake 5 min.
- Meanwhile, beat eggs, lemon zest and lemon juice with wire whisk until well blended. Add sugar, flour and baking powder; mix well. Pour over crust.
- Bake 25 min. Cool on wire rack 10 min.; sprinkle with powdered sugar. Cut into 16 squares. Serve warm. Store leftover bars in tightly covered container at room temperature.

LEMON ICE CREAM BARS

Steps:
- Make the lemon curd: Combine the egg yolks, granulated sugar and lemon juice in a medium saucepan over medium heat; cook, whisking, until the mixture begins to thicken, about 8 minutes. Stir in the butter, 1 piece at a time, with a wooden spoon. Cook, stirring, until thick enough to coat the back of the spoon, about 7 more minutes. Strain through a fine-mesh sieve into a medium bowl, pressing the curd through with a rubber spatula. Stir in the lemon zest and salt. Fill a large bowl halfway with ice. Set the bowl of curd on the ice and let cool completely, stirring occasionally.
- Make the bars: Coat an 8-inch-square baking dish with cooking spray and line with foil, leaving an overhang on 2 sides. Pulse the cookies in a food processor until finely crushed. Slowly add the melted butter and lemon zest and pulse until the mixture starts coming together.
- Transfer the crumb mixture to the prepared baking dish and press firmly into the bottom. Spread the ice cream over the crumb mixture with a rubber spatula; spread the lemon curd on top. Cover with plastic wrap and freeze until firm, about 4 hours or up to 2 days.
- Lift out of the pan using the overhanging foil. Cut into pieces and dust with confectioners' sugar.
LEMON BARS
Steps:
- Cream butter and sugar, then add the flour and oatmeal to make the dough (it will be a little crumbly). Set aside. Stir juice and zest into milk. Set aside. Butter (or spray) a 9 by 13 inch pan. Press two-thirds to three-quarters of the dough into the pan. Spread lemon/milk mixture evenly over the top of the dough. Sprinkle the remaining dough (kind of like streusel) over the top. Bake at 350 degrees for 30 to 35 minutes until golden. When cool, slice into 1-inch squares.

- Mix dry cake mix, 1 egg, and oil until crumbly.
- Reserving 1 cup, pat remainder in ungreased 9x13 pan, and bake at 350 for 15 minutes.
- While that bakes, beat cream cheese, sugar, 1 egg, and lemon juice together until light and smooth.
- Spread over baked layer and sprinkle reserved crumb mixture over the top.
- Bake 15 minutes more.
- Cool and cut into bars.
LEMON OREO CHEESECAKE BARS RECIPE

- Heat oven to 350 degrees F. Grease a 9x13-inch glass pan with non stick cooking spray.
- Mix the dry cake mix (do not follow directions on box), butter, egg, oil, and water together with a fork. Then add in the white chocolate chips. Spread evenly in the greased pan. Get all the way to the edges. Set aside while you make the next layer.
- For the cheesecake layer, combine the cream cheese and sugar in a medium bowl and blend together well. Then add the vanilla, eggs and lemon juice. Stir in chopped Oreos by hand with a spoon. Carefully spread the cream cheese layer over the lemon cake mix layer. Bake for 30 to 35 minutes. (I cooked mine for 32 minutes) Carefully remove it from the oven to prevent it from sinking. Mine sunk just a little bit. Let it cool for about an hour. While it is cooling you can make the glaze. For the glaze mix the powdered sugar and melted butter together. Add enough lemon juice to form the consistency of thick frosting. Then mix in the cream cheese and yellow food color (a few drops). When bars are cooled, cover with lemon glaze. Refrigerate for an hour or so to let the bars set up before cutting.

- In small saucepan, combine the butter, cocoa, sugar, egg and vanilla. Cook and stir over medium-low heat until mixture reaches 160°., In a large bowl, combine the graham cracker crumbs, coconut and walnuts. Stir in cocoa mixture until blended. DEEP DARK CHOCOLATE SOUR CREAM BARS
These cookies come from Camilla Saulsbury's Cake Mix Cookies book. My son (age 9) actually made these and they are VERY rich. Kinda a cross between a chocolate cake and a brownie. Perfect for your chocolate lover and very easy to do. Uses a chocolate cake mix.

- Preheat oven to 350°F
- Spray the bottom only of a 13 x 9 inch metal baking pan with nonstick cooking spray.
- Reserve 1 cup of the cake mix; set aside.
- In a large bowl place remaining cake mix, 1 of the eggs, and 1/4 cup melted butter.
- Blend 1 to 2 minutes with an electric mixture on low speed until well blended.
- Press mixture into prepared pan.
- In medium bowl mix remaining 3 eggs, sour cream, brown sugar and remaining 1/2 cup melted butter with electric mixer set on low speed until well blended.
- Add reserved cake mix, beating 2 minutes on medium speed until mixture is smooth; stir in chocolate chips.
- Pour over prepared crust.
- Bake for 35 to 38 minutes, until just set and light golden on top.
- Cool completely.
- Cut into bars and sift with cocoa powder if desired.

- Heat oven 350°F (325°F for dark or nonstick pan). Grease bottom only of 15x10x1-inch pan.
- In large bowl, mix cake mix, butter and eggs with spoon until well blended. With floured fingers, press evenly in pan.
- Bake 14 to 18 minutes or until light golden brown and toothpick inserted in center comes out clean. Cool 5 minutes. Spread evenly with preserves. Cool 30 minutes.
- In medium bowl, beat cream cheese and milk with electric mixer on medium speed until smooth; set aside.
- In 1-quart saucepan, melt white chocolate over low heat, stirring frequently. Add warm melted white chocolate to cream cheese mixture; beat on medium speed until creamy (mixture may look slightly curdled). Carefully spread over preserves. Refrigerate about 1 hour or until set.
- Sprinkle powdered sugar over top. For bars, cut into 8 rows by 6 rows. Store covered in refrigerator.
