- Preheat oven to 350 degrees with the rack in the middle position.
- Melt the butter in a large microwave safe bowl.
- Add the brown and white sugars and let cool a bit.
- Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
- Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
- With a spatula spread dough evenly into a greased 8x8 baking pan.
- Bake at 350 for 25- 30 minutes.
- Cut into bars when cool.

- Grease a 9-inch square baking dish with cooking spray.
- Melt butter in a saucepan over medium heat. Stir in brown sugar and vanilla extract. Add oats and cook over low heat until combined, 2 to 3 minutes. Spread 1/2 of the oat mixture into the prepared pan.
- Melt chocolate chips with peanut butter in small heavy saucepan over low heat, stirring frequently until smooth, about 4 minutes. Pour chocolate mixture over oat layer and spread evenly. Crumble remaining oat mixture over chocolate, pressing in gently.
- Cover with plastic wrap and chill until set, 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

- In a mixing bowl, cream 1 cup butter and brown sugar.
- Beat in eggs and 2 teaspoons vanilla.
- Combine the oats, flour, 1 teaspoon salt and baking soda; stir into creamed mixture.
- Press two-thirds of oat mixture into a greased 15 x 10-inch baking pan.
- In a saucepan, combine milk, chocolate chips and remaining butter and salt.
- Cook and stir over low heat until chocolate is melted.

- Preheat oven to 350 degrees F. Butter and flour a 9 by 13 inch baking pan. Sift the dry ingredients together and set aside. In an electric mixer cream the butter, molasses and sugar until light and fluffy. Beat in the egg and add the reserved dry ingredients and mix until just incorporated. - Bring 3 cups water to a boil in a large saucepan over medium heat. Add the oats, cocoa powder, vanilla and salt and cook, stirring regularly, until thickened, 5 to 7 minutes. Turn off the heat and stir in the honey. Cover and let stand for 2 minutes.

- Preheat oven to 350°F.
- Combine all crumb ingredients in a large bowl, stopping after adding the salt. Beat at medium speed until mixture is crumbly (about 3 minutes). Reserve 1 cup of crumb mixture.

- Have ready, ungreased, two 9x9" square baking pans or one 15x10" jelly-roll pan.
- Preheat oven to 375 degrees.
- In a large glass or plastic mixing bowl, soften the butter (a few seconds in the microwave); it should be very soft but not completely melted. Using a heavy spoon, beat in both sugars, then beat in the eggs until smooth. Beat in the vanilla, baking soda and salt. - Center rack in the oven and preheat the oven to 350 degrees. Butter a 9X13 inch pan and place the pan on a baking sheet.
- Whisk together the flour, baking soda, salt and cinnamon.
- Using an electric mixer, beat the butter on medium speed until it is soft and creamy. Add the brown sugar and beat for 2 minutes, then add the eggs one at a time, beating for a minute after each egg goes inches Beat in the vanilla. The mixture should be light and fluffy. Reduce the mixer speed to low and add the dry ingredients, mixing just until they disappear. Still on low speed, stir in the oats and 1 cup of the chopped walnuts.
- Set aside 1 1/2 to 2 cups of the mixture, then turn the remaining dough into the prepared 9X13 pan. Set aside while you prepare the next layer.
- Set a heat proof bowl over a saucepan of simmering water. Put the condensed milk, chocolate chips, butter and salt in the bowl and stir occasionally until the milk is warm and stir in the vanilla and 3/4 cup walnuts.
- Pour the warm chocolate over the oatmeal crust, then scatter the remaining oatmeal mixture over the top. Don't try to spread the oatmeal, and don't worry about getting the topping even. It will create a a pretty open lacy pattern as it bakes.
- Bake for 25 to 30 minutes, or until the topping is golden brown and the chocolate layer is dull and starting to come away from the sides of the pan. Transfer the baking pan to a cooling rack for about 2 hours.
- Run a blunt knife between the edges of the cookie and the pan and carefully turn the cookie out onto a rack. Turn right side up, then refrigerate for at least 1 hour before cutting. ( Ok so there was no way my fam could wait that long. I was able to cool it for 2 hours but that was it. It was fabulous a bit warm and also later when it was refrigerated!).
