CHOCOLATE CHIP APPLESAUCE CAKE
At last, an easy-to-make "scratch" cake recipe that does not need frosting! Recipe has been modified from one given to me by a friend years ago... 6/30/07 NOTE: This is not a standard chocolate cake recipe nor a spice cake recipe. The cocoa and chocolate chips help add to the "dark chocolaty" flavor and appearance but the applesauce and spices give it a unique flavor addition, producing a dark, moist cake with a different flavor with the added bonus of being a no-frost cake.

CHOCOLATE CHIP APPLESAUCE CAKE - SUPER MOIST!
Super moist, easy and doesn't need icing. I've had many people request this recipe and have had it described as "the best chocolate cake I've ever eaten." To make this healthier, I change the applesauce amount to 2 1/4 c. and use only 1/4 c. of oil.

Steps:
- Preheat the oven to 375 degrees F.
- Prepare a 9-inch spring form pan: Cut a circle of parchment the size of the removable bottom of the pan. Fit the parchment circle into the bottom of the pan. Tear off an 18-inch length of aluminum foil. Center the pan over the sheet of foil and crumple and crimp the foil all around the sides of the pan. (The foil will prevent water from seeping into the pan during baking.) Set the pan aside.
- In a medium saucepan, bring the espresso, brown sugar and the cinnamon sticks to a simmer over very low heat. Simmer until the syrup is very fragrant, about 20 minutes. Stir in the butter until melted, and then stir in the cayenne pepper. Set aside.
- Pulse the chocolate in the food processor until coarsely chopped. Transfer to a deep bowl. Pour in the warm coffee syrup and whisk until the chocolate is completely melted. Whisk in the beaten eggs until completely blended.
- Scrape the batter into the prepared pan. Set the pan in a large, deep, oven-proof skillet or a roasting pan and set on the oven rack. Pour in enough water to come halfway up the sides of the pan. Bake until center is set and barely wiggles when you shake the pan gently, 50 to 60 minutes.
- Cool the cake to room temperature. Remove the foil and chill the cake in the pan at least 8 hours. Run a wet knife around the sides of the pan then pop the spring to release. Place a platter on top of the cake and flip over. Remove the bottom of the pan, and peel off the parchment. Serve with cinnamon ice cream and raspberries.

CHOCOLATE APPLESAUCE BREAD
I got this from another recipe site, so I don't know the original source. It is nice and moist and has a good chocolately flavor. The original recipe said to put it in 2 1-lb. loaf pans, but they were so full that the middle was still gooey when the outside was done, so I'm suggesting 3 pans and a slightly shorter baking time.

Steps:
- Heat oven to 350 degrees. Grease and flour three 9-inch round cake pans.
- In a microwave-safe glass bowl, melt butter and chocolate together in microwave on HIGH until melted and smooth, about 1 to 1 1/2 minutes, stirring half-way through. Set aside. Mix flour, sugar, cocoa, baking soda, baking powder, and salt in a large bowl until blended.
- Add sour cream, eggs, 1 cup water, chocolate mixture and vanilla; beat 30 seconds on low speed, until dry ingredients are moistened. Increase to medium; beat 2 minutes. Pour into prepared pans.
- Bake at 350 degrees for 32-40 minutes or until cake layers spring back when pressed (I baked mine for 35 minutes and it was a little too much . . . but every oven is different!).
- Cool layers in pans for 10 minutes. Remove cakes onto rack to cool completely.
- In a microwave-safe glass bowl, melt chocolate in microwave on HIGH for 1 minute. Stir until smooth. Set aside. Beat shortening, butter, sour cream, milk, vanilla, salt, 1 cup of the sugar and the cocoa powder in a medium-size bowl until creamy. Gradually beat in remaining sugar and melted chocolate until thick and smooth.
- Place a cake layer on a pedestal (I just used a large plate. . . I have yet to invest in a pedestal!) Spread with about 2/3 cup frosting. Top with second layer; spread with about 2/3 cup more frosting. Top withremaining layer. Frost top and sides. Garnish with chocolate curls and berries if desired
