CHOCOLATE-JAM CAKE
Had some cranberry sauce left over and it had thickend to the consistency of jam. Used it in this cake. Nice combination. You can use any kind of jam you wish. This recipe comes from a little recipe leaflet I bought a long time ago.

Steps:
- Preheat the oven to 350°F.
- Grease and flour a round 9 inch baking pan.
- Put butter, sugar, jam and water in a small pan on low heat.
- Stir until butter is melted and sugar is dissolved.
- Let it cool to room temperature.
- Sieve flour, baking powder and cocoa in a bowl.
- Add eggs and butter mixture.
- Mix batter with a wooden spoon, don't overmix.
- Pour batter in prepared pan.
- Bake 35 minutes or until an inserted skewer comes out clean.
- Serve with whipped cream or frosted with chocolate or just as it is.

a few years ago my son wanted a chocolatecake for his birthday, so in the weeks ahead I tried several recipes, and this one was the winner :) I even make it for friends for birthdays, so I reckon that's a good sign. - melt the butter in a pot. measure syrup and mix with the butter.
- put eggs, milk and sugar in a large bowl and beat well with an egg beater.
- sift the flour, cocoa baking powder and soda into the bowl. beat to mix.
- add the melted butter and syrup and beat again. pour into the tin.
- a 23 cm round cake tin.
- bake the cake for 40 minutes at 180° in a preheated oven,or until a skewer poked into the centre comes out clean. ( when I bake it I need it to be in the oven for about 1 hour).
- cool cake on rack.
- if you like cut cake in half, fill with whipped cream.
- for icing, warm the butter, cocoa and water together until butter melts.
- take off heat. sift in icing sugar. mix until smooth. spread on cake.

CHERRY JAM DEVIL'S FOOD CAKE
Steps:
- Preheat the oven to 350 degrees F. Lightly spray two 9-inch-round cake pans with non-stick cooking spray and dust with cocoa powder.
- Whisk together the flour, baking powder, baking soda and salt in a medium bowl. Beat together the butter, granulated sugar, brown sugar and oil in a stand mixer fitted with the paddle attachment on medium speed until light and fluffy, about 2 minutes.
- Meanwhile, whisk together the hot coffee, 3/4 cup cocoa powder and vanilla in a medium bowl until smooth.
- Add the eggs to butter mixture one at a time, mixing well and scraping down the bowl between each addition. Beat in the coffee mixture until well combined. Add half of the flour mixture and beat just until combined, then beat in the sour cream followed by the remaining flour mixture. Scrape down the bowl and beat 1 minute more.
- Divide the batter between the prepared cake pans. Bake until a toothpick inserted in the center comes out clean, 25 to 30 minutes. Transfer to racks. When the cakes are cool enough to handle, turn them out onto the racks to cool completely before frosting.
- To assemble the cake, place one cake layer onto a serving platter or cake stand. Trim the top with a long serrated knife to make it level, if needed. Spread half of the Cherry Jam Filling on top in an even layer. Top with the other cake layer and frost the entire cake with chocolate frosting. Spread the remaining Cherry Jam Filling on top of the cake.
- Stir together 2 tablespoons water with the cornstarch in a small bowl until the cornstarch dissolves. Combine the cherries, sugar, remaining 6 tablespoons water and the lemon juice in a medium pot over medium heat and simmer for 2 minutes. Stir in the cornstarch mixture and continue to simmer, stirring occasionally, until the mixture has thickened and looks clear and shiny, about 5 minutes. Cool to room temperature and then refrigerate, covered, until cold, about 1 hour.

- For the cake mix: Whisk together the flour, sugar, cocoa, dry milk, baking powder, baking soda and salt in a medium bowl. Store in a resealable bag in a cool dry place for up to 3 months until ready to use.
- To bake: Preheat the oven to 350 degrees F. Line two 9-inch cake pans with parchment. Coat with cooking spray.

- Preheat the oven to 350 degrees F. Butter two 8-inch x 2-inch round cake pans. Line with parchment paper, then butter and flour the pans.
- Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined. In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. - Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside until cooled to room temperature.
- In the bowl of an electric mixer fitted with a paddle attachment, beat the butter on medium-high speed until light yellow and fluffy, about 3 minutes. Add the egg yolk and vanilla and continue beating for 3 minutes. Turn the mixer to low, gradually add the confectioners' sugar, then beat at medium speed, scraping down the bowl as necessary, until smooth and creamy. Dissolve the coffee powder in 2 teaspoons of the hottest tap water. On low speed, add the chocolate and coffee to the butter mixture and mix until blended. Don't whip! Spread immediately on the cooled cake.

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch pan.
- Sift 2 cups white sugar and 2 cups flour together; set aside.

- In a large bowl, sift together the flour, cocoa powder, salt, baking soda, and baking powder. Set aside.
- In a large glass measuring cup, combine the stout, vanilla, and espresso powder. Set aside.
