COCO'S NON-EGG, CHOLESTEROL-FREE MAYONNAISE

Great substitute for regular mayonnaise! I came up with this recipe for my friend's son who is allergic to eggs and dairy product and he loved it!

Coco's Non-Egg, Cholesterol-Free Mayonnaise image

Steps:

  • Combine soy milk, salt black pepper and mustard, Whisk well with a food blender. Add oil and whisk till the liquid blends together. Add half of the lemon juice and continue whisking till it starts thickening. Add the rest of the lemon juice and mix well. Add some more salt and pepper if desired.

100 ml canola oil, preferably cholesterol free
1/4 teaspoon salt

Steps:

  • Make yogurt cheese by draining the yogurt as follows. Line a colander with cheesecloth and place in a bowl. Spoon the yogurt into the colander. Refrigerate and let drain for at least 1 hour. Discard the liquid in the bowl.
  • In a food processor, combine the yogurt cheese, tofu, and garlic. Process until the mixture is pureed, about 3 minutes.
  • Add the remaining ingredients. Process again to combine, about 3 minutes. Adjust the seasoning with additional salt or pepper, to taste.
  • This dressing will keep for up to 2 weeks in an airtight container in the refrigerator.

  • Make sure the oil is at the same temperature as the milk. You can use cold oil and cold milk, but I found room temperature milk and oil to be the easiest to work with.
  • If you’re using an immersion blender, combine all the ingredients in the blender cup, place the immersion blender in, so that way it sits firmly on the bottom of the cup and pulse until the mayo emulsifies. Once most of the vegan mayo has emulsified, you can move the blender up and down to incorporate any oil that is sitting on the top.
  • I usually use an immersion blender, but I’ve also tried to make this mayo using a regular blender and it works as well, although I think an immersion blender is the best choice.
  • If you’re using a regular blender, place all the ingredients in the blender, except the oil, and blend for about 5 seconds. Then add the oil gradually while the blender is going at a slow speed until it thickens, then you can turn it gradually from low to high and let it go until well mixed.
