Steps:

  • Season the beef with salt and pepper. In a medium bowl, whisk together the lime juice, soy sauce, sugar, garlic and chile until the sugar is dissolved. Add the beef, toss to coat and set aside.
  • In a large skillet over medium-high heat, heat the oil until shimmering, about 1 minute. Then add the beef and cook, stirring, until cooked through, 3 to 5 minutes.
  • Remove the beef from the skillet and set aside. Allow the liquid in the skillet to reduce until thickened, about 4 minutes. Add the mushrooms, spring onions and asparagus and cook until all the vegetables are tender-crisp, 5 to 7 minutes. Return the beef to the skillet and toss to combine.

Steps:

  • Heat 3 tablespoons of the oil in a wok or large skillet over high heat. Add the chicken, sprinkle with salt and pepper and stir-fry until browned and cooked through, 4 to 5 minutes. Remove to a plate.
  • Add the remaining 2 tablespoons oil to the wok, add the mushrooms (in 2 or 3 batches if necessary) and stir-fry until browned around the edges, 3 to 4 minutes. Add the carrots and stir-fry for 2 minutes, then add the garlic and stir-fry for 1 minute. Add the pineapple and stir-fry for 1 more minute. Add the sweet chili sauce and continue to cook until the liquid comes to a simmer. Finish with the lime juice.
  • Transfer to a serving bowl and garnish with the sesame seeds. Serve with rice.

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.

  • Cover and marinate for 30 minutes.
  • Heat oil in wok, or wide frying pan.

  • Stir-Fry: In a wok or large skillet over high heat add the canola oil. Add the beef and cook until browned, about 3 minutes. Set aside on a plate.
  • To the same pan the beef was cooked in, add the carrots, celery, onions, mushrooms, ginger, garlic, and broccoli and stir-fry until slightly tender but not soft, about 3 minutes.
