TURNIP PUFF
"My family would never eat turnips until I served them this way," says Debbie Henry from Phelpston, Ontario. This downsized version goes well with turkey, ham or roast beef. TIP: A pound of turnips yields about 2 cups chopped.

- Place turnips in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain; mash with butter. Cool slightly. , Preheat oven to 375°. Beat in egg. Combine the flour, baking powder, brown sugar, salt, pepper and nutmeg; stir into turnip mixture. , Spoon into a 3-cup baking dish coated with cooking spray. Toss bread crumbs and butter; sprinkle over casserole. Bake, uncovered, until heated through and a thermometer reads 160°, 30-35 minutes.

SPICED TURNIPS (SHALGAM MASALA)
I love turnips. This Northern Indian dish is great way to spice up traditional mashed turnips. This dish is great garnished with fresh cilantro or parsley and served with basmati rice, or with naan bread. The amount of chiles you use really controls the heat factor in this dish.

Steps:
- Heat oil in a large saucepan over medium heat. Add onion; cook and stir until soft, about 10 minutes. Stir in ginger-garlic paste and chile peppers; cook until fragrant, about 1 minute.
- Stir tomatoes, coriander, cumin, turmeric, and salt into the saucepan; mix well. Add turnips and hot water; stir well. Cover and bring to a boil. Reduce heat and simmer until turnips are tender, 20 to 30 minutes. Add brown sugar and coarsely mash the turnips.

CHOPPED TURNIP APPETIZER
This recipe is soo simple, yet so delicious. Very old world. You really need a food processor or a blender, but I think a food processor works better. PS. This is a very healthy appetizer.I don't know why they call it chopped turnip, but I think rutabaga is in the turnip family...

Steps:
- Peel the rutabaga.
- Add to the food processor.
- Use a high setting and gradually add olive oil.
- You want as smooth consistency as you can get.
- Peel the shallots, garlic and add to the food processor.
- You might have to add more olive oil so you can get this very smooth consistency.
- This might take at least 4 minutes.
- I add a lot of pepper and salt to taste.
- The pepper adds more taste.
- This keeps well.
- I serve on black bread.
- Goes well with a really dry white wine.

WARM TURNIP GREEN DIP

Steps:
- 1. Cook bacon in dutch oven over medium high heat for 5 minutes or until crisp. Remove bacon, and drain on paper towels, reserving 1 tablespoon of the drippings in the dutch oven.
- 2. Saute onion and garlic in hot drippings for 3 to 4 minutes.
- 3. Add wine and cook for 1 to 2 minutes to loosen particles from the bottom of the pan.
- 4. Stir in turnip greens, next 4 ingredients and 1/2 cup of the cheese.
- 5. Cook, stirring often, 6 to 8 minutes or until cream cheese is melted and mixture is thoroughly heated.
- 6. Transfer to a lightly greased baking dish. Sprinkle evenly with remaining cheese. Broil inches from heat 4 to 5 minutes or lightly browned. Sprinkle evenly with bacon.

- In a large skillet cook the bacon over medium heat until crispy. Remove the bacon, drain on paper towels, and crumble. Carefully pour away all but about 2 tablespoons of the bacon grease; return the pan to the heat, and add the onions. Cook about 3 minutes. Add the turnip greens and cook 8 to 10 minutes. Add the Alfredo sauce, cream cheese, salt, pepper, and garlic powder. Cook until the cream cheese has melted and the mixture is bubbly. Stir in the crumbled bacon.
- Transfer the mixture to the baking dish, and bake 25 minutes. Remove from the oven and sprinkle with Parmesan cheese. Turn on the oven’s broiler, and return the baking dish to the oven for 5 minutes.
