CHOPSTICK TURKEY CASSEROLE

This is a great recipe for leftover turkey; It is from an old newspaper in Toronto - The Evening Telegram- printed some 30 years or more ago.

Steps:

  • Cut turkey in bite size chunks.
  • Drain mandarin oranges reserving 1/2 cup of the syrup.
  • Beat mushroom soup until smooth and blend in 1/4 cup of mandarin orange syrup Add turkey, mandarin oranges, celery, onion, nuts and half of the noodles.
  • Turn into buttered baking dish.
  • Top with remaining noodles.
  • Bake in moderately hot oven, 350-375 for about 30 minutes or until bubbling.

1 1/2 cups diced cooked turkey or 1 1/2 cups diced cooked chicken
1 (10 ounce) can mandarin oranges
1 (10 ounce) can condensed mushroom soup
1 cup chopped celery
1/4 cup chopped onion
1/2 cup chopped salted nuts
2 ounces chow mein noodles (the ones in the can)

LEFTOVER TURKEY CASSEROLE

You could use chicken, ham or beef -whatever you have left over. If you have it, use your favorite stuffing recipe, enough to top the casserole

Steps:

  • Heat oven to 350 degrees F.
  • In a 9 x 13-inch pan or large oven-safe casserole dish (or whichever size is appropriate if you don't have as many leftovers), spread the mashed potatoes in the bottom of the pan, layer meat and vegetables over the potatoes.
  • Spread gravy over the top, and then top with leftover stuffing. If you don't have stuffing leftover, or don't care for it, you can put the mashed potatoes on top of the casserole to make a crust.
  • Bake for approximately 30 minutes or until hot.

2 -3 cups cooked turkey
1 -2 cup gravy
2 cups mashed potatoes
1 (12 ounce) bag mixed vegetables
leftover prepared stuffing

Smoked Turkey Casserole image

Steps:

  • Cook pasta in boiling salted water until al dente. Drain, do not rinse set aside.
  • Saute garlic, onions, green onions and celery in olive oil until limp but not browned about 5 minutes.
  • Add mushrooms, cook until liquid has evaporated.
  • Add wine to deglaze the pan.
  • Add frozen peas, seasoning, parsley, red pepper, salt & pepper. Cook an additional 2 minutes.
  • Add turkey and pasta, cook until heated through. Adjust seasoning.
  • Drizzle high quality olive oil over dish to taste before serving. (Or leave it out if you do not want the extra fat/calories).

1 cup dry rotini pasta
2 quarts water
salt
2 cups leftover turkey (preferably smoked)
2 garlic cloves, smashed & finely chopped
1 cup onion, sliced and cut in half
4 green onions, coarsely chopped
1/2 cup celery, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in boiling water, stirring occasionally until almost cooked through and still firm to the bite, about 4 minutes. Drain.
  • Melt butter in a large saucepan over medium heat. Whisk in flour; cook, stirring, until mixture is light golden, about 3 minutes.
  • Pour milk into butter and flour mixture, whisking constantly. Stir in cream of mushroom soup, red bell pepper, green bell pepper, green onions, garam masala, and dried tarragon. Bring mixture to a simmer, cook for 2 minutes. Remove from heat.
  • Stir in pepperjack cheese until cheese is melted and incorporated.
  • Stir pepperjack cheese mixture, turkey meat, and noodles in a large bowl until evenly incorporated. Pour mixture into a large casserole dish.
