CHINESE PORK 'N' NOODLES
I based the recipe for these noodles on a similar dish I found in a magazine. I changed a few things around and my husband and I loved it. It's just as good when the pork is replaced with seafood.-Jennifer Enzer of Manchester, Michigan

PORK DRUNKEN NOODLES
Supposedly so-called because they are the perfect match for a chilled beer, or indeed for a hangover. However, even without the sore head, these aromatic spicy noodles will really hit the spot.

- Bring a small pot of water to a boil; remove from the heat, add the noodles and let stand 8 minutes. Drain the noodles and rinse under cold water, then snip into smaller pieces with kitchen shears.
- Meanwhile, season the pork lightly with salt and pepper. Heat 1 tablespoon vegetable oil in a medium skillet over medium-high heat. Add the pork and cook until just cooked through, 3 to 4 minutes per side. Brush each chop with hoisin sauce; turn and cook 30 seconds. Brush with more hoisin sauce, turn and cook 30 more seconds. Remove to a cutting board and let rest 5 minutes, then thinly slice.
- Divide the noodles among bowls. Strain the pickled vegetables, reserving the liquid. Stir 1 tablespoon hoisin sauce and the remaining 2 tablespoons vegetable oil into the reserved liquid; drizzle over the noodles. Top with the pork, pickled vegetables, lettuce and herbs.

- Slice the tenderloin crosswise 1/8 inch thick. (You may wish to toss the pork in the freezer first for 10 minutes or so to make slicing easier.) In a medium bowl, whisk together the wine and 2 teaspoons of the cornstarch. Add the pork and mix well. In a small bowl, whisk the remaining cornstarch in 1/4 cup water, mixing until it is completely dissolved.
- In another small bowl, stir together the black beans and crushed red pepper. In another small bowl, stir together the hoisin sauce and soy sauce.
- In a wok or large pan, heat 2 tablespoons of the oil over high heat until hot but not smoking. Add the cabbage; it should sizzle. Cook, stirring, for about 3 minutes. Add the red bell pepper and cook for 2 minutes more. The cabbage may brown slightly. Transfer to a plate.
- Add the remaining 2 tablespoons of oil to the wok or pan and heat over high heat. Add the ginger and garlic and stir until the oil is hot and the ginger and garlic sizzle. Do not let the aromatics brown. Stir the pork mixture, add to the wok or pan, and cook, stirring briskly, until the pork is no longer pink, 2 to 3 minutes.
