CILANTRO-CHILI PEPPER SAUCE
I am overrun with wild cilantro in my back yard. Literally, it feeds my compost bin more than my family even though we use it in everything. This sauce (perhaps more of a pesto) is fabulous on anything but the obvious choices are chicken and tuna. Enjoy.

- Cut the stem end off of the chile peppers, and remove the seeds using a thin knife, otherwise leaving the peppers whole. Place the peppers into a skillet, and toast over medium-high heat, turning frequently, until the skins of the peppers have blackened and loosened, about 10 minutes. The peppers are ready when 1/4 of the skin has blackened. Remove the peppers, place into a small bowl, and cover with plastic wrap. Allow to cool and steam for about 15 minutes, then remove and discard the skins. Chop the peppers, and set aside.
- Heat the sesame oil in the skillet over medium heat. Stir in the garlic, and cook for 2 minutes to soften, then increase heat to medium-high, and stir in the chopped peppers and salt. Cook and stir until the mixture is hot and sizzling, about 1 minute. Pour in the vinegar, brown sugar, and fish sauce. Bring to a boil, then reduce heat to medium-low, and allow to simmer for 10 minutes.
- Scrape the mixture into a blender, and add the soy sauce, lime juice, cilantro, and green onion. Puree until smooth. Serve immediately.

SPICY TOMATO SALSA WITH CILANTRO AND CHILES

- Bring a medium pot of water to a boil and cook tomatoes and garlic 2 minutes. Drain and rinse with cool water. Peel and core tomatoes.
- In a food processor or blender, blend first seven ingredients until mostly smooth. Transfer tomato mixture to a mixing bowl and fold in cilantro and onion. Taste, adjust seasoning, and serve.

This sauce is popular in South America and the Caribbean. It is usually served with meat such as barbequed chicken or steak but it also tastes great on baguette or other fresh bread. From Baltic Maid.

- Add the following ingredients to a blender or food processor: cilantro leaves, garlic cloves, ginger, and olive oil. Puree the ingredients. Add more oil if necessary.
- Add salt, pepper, chili flakes, and lime juice to taste. I used about 2 tablespoons of lime juice. Mix once more.
- Serve in a small bowl.

- For the swordfish: Heat a large skillet over medium-high heat. Pat the swordfish dry and season with salt. Add the olive oil to the skillet. When the oil is hot, add the swordfish and cook until golden on the underside, about 2 minutes. Flip and cook until just cooked through, about 2 minutes more. To serve, mound the cabbage on serving plates and top with the swordfish. Drizzle with some of the cilantro and green chile sauce.
BEEF CHILI WITH CHIPOTLE CHILIES AND CILANTRO
Steps:
- Sauté beef and 2 cups chopped onions in large Dutch oven over high heat until beef is cooked through, stirring often and breaking up beef with back of spoon, about 10 minutes. Add cumin, chili powder, garlic powder and chipotle chilies; sauté 3 minutes. Mix in 2 1/2 cups water and 1/2 cup cilantro. Reduce heat to medium-low. Cover partially and cook 1 1/2 hours, adding more water by 1/4 cupfuls if chili becomes dry. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill. Bring to simmer before continuing.)
- Mix remaining 1/2 cup cilantro into chili. Ladle chili into bowls. Serve, passing cheese, sour cream and additional chopped onion separately.

CHICKEN TOMATO CASSEROLE WITH CILANTRO PEPPER SAUCE
Fresh tomatoes, sweet green peppers, onion and cilantro sauce makes this an easy dish to put together. Perfect for a weeknight or even entertaining.

- Chicken -- I use a baggie to marinade my chicken. Just add the olive oil, lime juice, salt, cayenne and chicken, close up the baggie and shake well to make sure the chicken is covered with the marinade. I like to marinade at least 1-2 hours and up to 8 hours (or all day).
- Make sure to take the chicken out of the refrigerator to let it come to room temp before you begin to saute.
- In a large saute pan (I prefer non-stick for this) add the olive oil and saute the chicken on medium high until golden brown on each side. Cooking time will depend on the size of your chicken breasts. About 4 minutes per side. Remove to a plate while you finish the pepper onion sauce.
- Pepper, Onion and Cilantro Sauce -- In the same pan you cooked the chicken in, add the remaining olive oil and bring to medium high heat. Then add in the garlic, green peppers, onion and cook 2-3 minutes until tender, but not brown. Remove from the heat and stir in the cilantro.
- Casserole -- Spray a 9x9 casserole dish with a non stick spray. Line the bottom of the dish with 2/3's of the tomato slices and season with salt and pepper. Then top with 2/3's of the pepper onion cilantro sauce, 1/2 the cheese, and the chicken breasts. Repeat with the remaining tomatoes and the pepper onion cilantro sauce over each chicken breast.
- NOTE: You can use individual baking or casserole dishes for this if you want.
- Bake -- In a 400 degree oven, bake 15-20 minutes, then sprinkle each chicken breast with the remaining cheese. Bake an additional 15 minutes until the chicken is tender. ENJOY!
