LIME CILANTRO HUMMUS

Lime Cilantro Hummus image

Steps:

  • In a food processor, combine garbanzo beans, cilantro, lime juice, water, oil, garlic, lime zest, garlic salt and cayenne; cover and process until blended. Serve with vegetables or crackers.

Cilantro Edamame Hummus image

Steps:

  • Place edamame into a large pot and cover with salted water. Place over medium-low heat, bring to a simmer, and cook until tender, about 5 minutes; drain.
  • Puree garlic in food processor until minced. Add edamame, tahini, water, cilantro, lemon juice, olive oil, kosher salt, cumin, and cayenne pepper; blend until smooth.

Cilantro Lime Hummus image

Steps:

  • Add all ingredients to the food processer and pulverize. If the hummus is too dry, you can add the leftover liquid from the drained garbanzo beans.

2 (8 ounce) cans garbanzo beans (drain, but keep liquid)
1 tablespoon olive oil
1 garlic clove (or more for your own taste)
2 limes, juice of (or more for your own taste)
1 teaspoon cumin
1 teaspoon coriander
cilantro (to your taste, I put a ton in)
1/2 teaspoon cayenne
3 dashes salt

  • Put the chickpeas and the clove of garlic into the bowl of a food processor fitted with the blade attachment. Turn the machine on and let the chickpeas go for about 5 minutes, stopping the machine and scraping down the sides often. Do not add any liquid at this point, even though the mixture is dry. This step helps insure a very creamy hummus. Just keep scraping down the sides.
  • Add the tahini and lemon juice and process for another minute or so, still scraping down the sides of the machine as necessary.
  • Add enough cold water to loosen the hummus to a dippable consistency, approximately 1/4 cup, but you may need more. The hummus will thicken further as it chills in the fridge, so don't be afraid to add that water to loosen it up.
