SUPER FANTASTIC CINNAMON ROLLS (BREAD MACHINE RECIPE)
I have tried countless recipes for Cinnamon Rolls trying to find the perfect recipe. This is it!! I can't ever make enough of these at home! They are so easy to make too - don't you just love bread machines!

Steps:
- Place all ingredients in bread machine in order recommended by manufacturer. Select DOUGH cycle press Start.
- In separate bowl combine cinnamon and sugar.
- After dough has finished, turn it out onto lightly floured surface and roll into a 16x24 rectangle. Spread dough with butter and sprinkle evenly with cinnamon and sugar mixture. Roll up dough and cut into 12 rolls. Place rolls in lightly greased 9x13 pan. Cover and let rise until almost doubled (about 30 min). Preheat oven to 400 degrees F.
- Bake rolls for 14-16 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners sugar, vanilla extract and salt. Spread frosting on warm rolls.

GLAZED CINNAMON ROLLS - BREAD MACHINE
The bread machine makes these rolls easy! I usually make them at night and refrigerate them to bake for the next day's breakfast. Adapted from Betty Crocker's Bread Machine Cookbook. Prep time listed includes the dough mixing time and rising time.

Steps:
- Place water, 2 Tablespoons butter, bread flour, 1/4 cup white granulated sugar, salt and yeast in the bread machine and start on dough cycle.
- Once dough is complete, roll out into a 9" square on a lightly floured surface.
- Mix 1/3 cup sugar and 2 teaspoons ground cinnamon together (I mix it in a measuring cup).
- Spread 2 Tablespoons softened margarine over the dough and sprinkle with the cinnamon mixture.
- Roll up tightly into a log and pinch the edges to seal.
- Cut into 1" slices and place in a greased 9"x9"x2" square pan (brownie pan).
- Cover loosely with plastic wrap and let rise 1 hour or so until double, OR in refrigerator overnight if making for breakfast.
- Preheat oven to 375°F and bake 20 minutes or until golden brown.
- Mix powdered sugar, vanilla and milk to make glaze, drizzle over rolls and serve warm.
CINNAMON CRESCENT ROLLS (BREAD MACHINE)
Very light and flaky rolls. Great for breakfast. I used the bread machine for the dough so it is only about 15 minutes worth of work, but the finished product looks like you slaved all day, and tastes even better!

- add milk,sugar, gluten and yeast to bread machine.
- add flour and margarine.
- set machine for dough cycle (1 1/2 hours).
- when machine is finished, turn dough onto floured surface.
- roll dough out to 1/4 inch thick.
- spread margarine over dough.
- sprinkle with cinnamon sugar.
- cut dough into triangles (a pizza cutter works great).
- roll dough starting at wide end.
- brush roll with egg white.
- sprinkle with additional cinnamon sugar if desired.
- let rise for about 30 minutes.
- bake @ 350 for 35 minutes.

Want to be famous for your cinnamon rolls? After 12 years of working on the perfect cinnamon roll I settled on this... and now I'm famous with all my friends. Lately I've started adding 1/2 cup of sour cream to the dough mixture, and I've really liked the results.

- In the pan of your bread machine, combine water, melted butter, vanilla pudding, warm milk, egg, 1 T. sugar, salt, bread flour and yeast. Set machine to Dough cycle. Press Start.
- When dough cycle has finished, turn dough out onto a lightly floured surface and roll into a 17x10 inch rectangle. Beat together butter, brown sugar and cinnamon. Spread dough with butter mixture.
- Roll up dough, beginning with long side. Slice into 16 one-inch slices and place in buttered jellyroll pan (or a 9x13 and another small pan). Brush outside of rolls with melted butter and sprinkle with additional brown sugar.
- Let rise in a warm place until doubled, about 45 minutes. Meanwhile, preheat oven to 350º F. Bake for 15 to 20 minutes.
- While rolls bake, beat together cream cheese, softened butter, confectioners' sugar, vanilla and salt. Remove rolls from oven and top with frosting.

BRIOCHE CINNAMON ROLLS (BREAD MACHINE)
I like this recipe because it calls for at least 5 eggs, making it a definite egg bread. I used a bread machine to mix the dough. After the dough finished in the machine I took it out and prepared it to be made into rolls. I do make two batches of the caramel glaze. One to go on the bottom of the rolls and the other to cover the top. Extra gooey and you know the other. The rolls, when right out of the oven, are divine. Okay, I do wait for them to cool down a bit.

- Place the ingredients for the dough into the bread machine as directed by the manufacturer. I let the dough go though the cycle until it has risen one time. At this point you can either punch the dough down and let the dough rest overnight in the refrigerator or go ahead and take the dough out of the machine and roll it out.
- When you roll out the dough cut the dough into two equal pieces and roll it out to 1/3" thickness.
- In a separate bowl mix together the cinnamon, sugar and softened butter. Sprinkle this mixture over the pieces of dough. Roll the dough up, reserving the neatest, straightest edge for the outside edge of the roll. Cut the rolls into 1 inch pieces and place them on a high sided baking pan. Cover them with a oiled piece of plastic wrap. Place the rolls in a warm spot to rise for at least an hour or until they have doubled in size. Uncover and bake at 350 degrees for about 10-12 minutes.
- To make the caramel glaze combine all the ingredients in a pot except vanilla. Cook and stir continuously until bubbly. Take off the heat and add vanilla. I like to make two batches. One for the bottom of the rolls and one for the top.

- Heat oven to 180C/fan 160C/gas 4. Grease a 20cm loose-bottomed cake tin and line the bottom with baking parchment. Mix the flour, caster sugar and cinnamon together with a pinch of salt in a bowl. Whisk the butter, egg yolks and milk together and combine with the dry ingredients to make a soft dough. Turn out onto a floured surface and roll out to a rectangle, about 30 x 25cm.
- Mix the filling ingredients together. Spread evenly over the dough then roll it up lengthways, like a Swiss roll, to form a log. Using a sharp knife, cut the dough into 8 even-sized slices and pack into the prepared tin. Brush gently with extra milk and bake for 30-35 mins or until golden brown. Remove from the oven and cool for 5 mins before removing from the tin.
- Sift the icing sugar into a large bowl and make a well in the centre. Place the cream cheese and butter in the centre, pour over 2 tbsp boiling water, and stir to mix. Add a little more water until you have a drizzly consistency. Stir in the vanilla essence, then drizzle the icing over the rolls. Serve warm or cold.

- Put yeast in bread machine first on bottom, then flour, sugar and salt.
- Then melt butter in microwave. Add beaten egg, milk and water.
- Pour onto dry ingredients in bread machine on the dough setting.
- When dough is done, put it onto a lightly floured surface.
- Knead in enough flour to make it easy to handle.
- If it is too elastic, cover and leave 10 minutes.
- Use floured rolling pin to roll out dough on floured surface.
- Roll out into rectangular shape to approx 1/4-inch thick.
- Use filling and spread over entire surface of dough with spoon.
- Roll up dough.
- Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
- Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
- Bake in a 350° oven for about 25 minutes, light brown on top.
- When done, make glaze and swirl over buns.
VEGAN BREAD MACHINE CINNAMON ROLLS

- Prepare dough: Place almond milk, melted vegan margarine, 1/2 cup sugar, salt, vanilla, and flour into a bread machine in the order listed. Start the Dough setting.
- Mix warm water, 1 tablespoon sugar, and yeast in a glass measuring cup.
- Preheat the oven to 300 degrees F (150 degrees C) for 1 minute. Turn the oven off and immediately place the yeast mixture inside to proof for 15 minutes.
- Add proofed yeast mixture to the bread machine and let the cycle finish, about 1 hour 45 more minutes.
- Remove dough and roll into an 12x18-inch rectangle. Mix brown sugar, walnuts, and cinnamon for filling in a bowl; spread evenly over the dough. Starting at the long end of the rectangle, roll dough into a log; slice log into 1-inch wide pieces. Transfer to a greased baking pan with cut-sides up.
- Preheat the oven to 400 degrees F (200 degrees C) for 1 minute. Turn the oven off; immediately place the rolls inside along with an uncovered bowl of boiling water. Allow rolls to proof for 1 hour.
- Remove rolls from the oven. Preheat to 350 degrees F (175 degrees C).
- Bake rolls in the preheated oven for 15 minutes.
- Meanwhile, mix powdered sugar, almond milk, and melted vegan margarine for glaze in a bowl.
- Remove rolls from the oven and spread glaze evenly over top.

- Rolls:
- Place ingredients in machine following the specifications of that particular machine. Set for dough cycle.
- After complete on dough cycle, remove from machine and roll out to about 17x10" rectangle.
- Filling:
- Mix together brown sugar and cinnamon.
- Moisten the dough by brushing with milk.
- Sprinkle brown sugar and cinnamon mixture over top.
- Roll tightly from long end, pinching edges closed when completely rolled.
- Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred).
- Place into greased cake pans or a cookie sheet. If using cake pans, use 3 9" pans. Let rise until doubled.
- Bake at 350° for 15-20 minutes, until golden. Do not overbake.
- Frosting: Spread on very warm rolls. They are best when eaten fresh, but we have found that 10-15 seconds in the microwave rejuvenates them.
