Steps:
- In a medium saucepan, heat 4 cups of the milk over low heat, being very careful not to let the milk boil. In a small bowl, mix together the cocoa, sugar, and the remaining 1/2 cup milk. Add the cocoa mixture to the warm milk, and continue to warm the cocoa until hot.
- Pour into 4 mugs and serve along with the garnishes.
- On a large serving tray, arrange the mugs of hot chocolate, a small pitcher of espresso shots, a bowl of crumbled toffee candy bar, a bowl of mini-marshmallows, and a bowl of Cinnamon-Sugar. Invite your guests to flavor and garnish their hot chocolate as they desire.;
- Cut the vanilla bean in half, lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add sugar and cinnamon and stir to combine. Set aside in a small serving bowl.;

- In a saucepan, combine the whole milk, evaporated milk and vanilla and warm up over low heat.
- Combine the cocoa powder, sugar, cornstarch and cinnamon in a bowl. Whisk the cocoa mixture into the warm milk mixture until smooth. Bring to a boil, whisking frequently to prevent it from scorching.
- Remove the hot chocolate from the heat just after it has come to a boil. The mixture should be super rich and thick!

- Mix the cocoa powder and sugar together in a small saucepan. Stir the 1 1/2 cups milk into the saucepan until the sugar has dissolved. Place over low heat; slowly bring the mixture to a low simmer.
- Whisk 2 tablespoons of milk together with the cornstarch in a small cup; slowly whisk the cornstarch slurry into the cocoa mixture. Continue cooking, whisking continually, until the hot chocolate reaches a pudding-like thickness, 2 to 3 minutes.

So very rich, creamy and incredibly delcious. Just the thing to warm you up on a cold winter's night in front of the fire. It's up to you but it is rich enough with out the whipped cream........ but I use it !!!

- Chop chocolate and melt over hot water.
- In another pan bring cream and all but 1/4 cup of milk to scalding point. Stir half scalded mixture into melted chocolate and mix well, then pour back into the saucepan and set over low heat. Mix in the reserved 1/4 cup milk with the cocoa, sugar and cornflour to make a smooth paste. Stir into the chocolate mixture and whisk or stir constantly until it comes to the boil and thickens slightly.
- Add vanilla, if desired and beat briskly with wire beater or hand rotary beater until mixture is foamy.
- Pour into cups and serve immediately topped with whipped cream.

- In a medium pot, whisk together chocolate, cocoa, sugar and chile. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk, then cream. Drop in cinnamon stick. Bring to a simmer.
- Remove pot from heat. Cover pot tightly and steep 1 hour. Whisk in vanilla and taste for sweetness, adding more sugar if you like. Warm over low heat before straining and serving hot, with marshmallows or whipped cream if desired.
