GRILLED SALMON WITH A CITRUS-BALSAMIC GLAZE

I love salmon! Can't wait to try this! (I just found this recipe among a million others that I had cut out of magazines a long time ago!) It says that the glaze can be stored covered in the refrigerator for up to 3 weeks. All you have to do is warm slightly before using, and can be served with many kinds of grilled or seared fish or meat. I went ahead and doubled the glaze part of the recipe because I like plenty of sauce on my salmon!

Steps:

  • Citrus-Balsamic Glaze: Add balsamic vinegar, wine, lemon juice, brown sugar, and freshly ground black pepper (to taste) to a small saucepan and bring to a boil.
  • Cook over high heat until mixture thickens, about 3 to 4 minutes.
  • Salmon: Remove any bones from the salmon.
  • Brush with olive oil and season lightly with salt and pepper.
  • Grill salmon over moderately hot coals on both sides until just cooked through.
  • Place on warm plates, drizzle glaze over and serve immediately.

  • Preheat oven to 350 degrees and season both sides of salmon generously with salt and pepper.
  • In a bowl, combine honey, balsamic vinegar, soy sauce, orange juice, orange zest, ginger, and oil to make glaze.
  • Place salmon in a baking pan and pour glaze over fish.
  • Place salmon in preheated oven until fish flakes easily with a fork.

  • For the glaze: In a small saucepan, bring the vinegar, maple syrup, mustard and garlic to a boil over medium heat. Reduce the heat to a simmer and cook until thick, about 12 minutes. Set aside to cool for 5 minutes.
  • For the salmon: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking sheet with parchment paper. Arrange the salmon on the baking sheet. Drizzle both sides of the salmon with the olive oil and season with 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the salmon is cooked through and flakes easily with a fork, 8 to 10 minutes.   • Preheat a cast iron pan or heavy bottomed skillet over medium high heat. Brush the salmon fillets with oil. Season with salt and pepper. Cook salmon until just cooked through, about 3 minutes on each side.
  • While salmon cooks, bring wine, vinegar, citrus juices and brown sugar to a boil over high heat. Reduce glaze 3 or 4 minutes, until thickened. Remove from heat. Stir in 1/2 teaspoon coarse black pepper.

  • Bring a pot of water to a boil and add salt. Add the rice to the boiling water and cook according to the package instructions.
  • Heat the oil in a large nonstick skillet over medium-high heat. When hot, add the chicken in one layer and season with the red pepper flakes and some salt and pepper. Cook until light brown, about 4 minutes. Flip the chicken, add the bell peppers, garlic, ginger and scallion whites and cook, stirring, for 2 minutes. Stir together the balsamic and brown sugar and add it to the skillet. Cook until the vinegar reduces a bit, about 2 minutes. Mix the cornstarch with 1/4 cup water and add it to the skillet.   • Position a rack in the oven 3 inches from the broiler. Line a half sheet pan with aluminum foil and place the salmon on the pan.
