EASY BAKLAVA

This recipe was given to me years ago by a friend who was known as the "go to person" for desserts at work. It does takes some short cuts & purists may not like that. But it sure does taste good & it is SO much easier than traditional baklava. I prefer this recipe to the ones with honey.

Steps:

  • Place 1 cup sugar, water,& lemon juice in a pan& bring to boil.
  • Simmer for 5 minutes, stirring occasionally.
  • Cool.
  • Lay out phyllo dough, cut in half& trim to fit a 9 by 13" pan.
  • Place 1/2 of dough in pan.
  • Combine filling ingredients, and spread over phyllo dough.
  • Cover with 2nd half of dough.
  • With a serrated knife, cut into triangles.
  • Drizzle evenly with melted butter.
  • Bake at 350 degrees for appproximately 30 minutes, till golden brown.
  • Remove from oven& pour cooled syrup over hot baklava.

Steps:

  • Preheat the oven to 390 degrees F then reduce heat to 300 degrees F before adding the baklava.
  • Combine walnuts, cinnamon, ground cloves, sugar and bread crumbs together in a large bowl.
  • Grease a baking pan with the melted butter. It should be the same size as the sheets of pastry. Trim the pastry to fit, if needed.
  • Brush 1 sheet of pastry with melted butter and place in the bottom of the pan. Repeat this until you have a layer about 5 or 6 sheets deep. Cover with some of the nut filling. Place 2 more buttered pastry sheets on top and cover with more of the nut filling. Continue the layers until all of the filling is used. Use the last 4 or 5 of the buttered pastry sheets as the top layer.
  • Using a small sharp knife cut a diamond shaped pattern into the baklava, cutting through the layers to the bottom of the pan. Stud the top of the baklava with the whole cloves.
  • Bake in the center of the pre-heated oven for 1 1/2 hours. For fan-forced ovens it may be necessary to cover the baklava with aluminum foil to prevent it becoming too dark.
  • When baked through remove and cool to room temperature.
  • To make the syrup:
  • Place the sugar, honey, water, cloves, butter and cinnamon in a saucepan and stir to combine. Boil for 7 to 10 minutes, then remove the cloves and cinnamon, with a slotted spoon and add the lemon juice.
  • Pour the boiling syrup over the room temperature baklava. Allow to cool to the touch and serve.

CHEF JOHN'S BAKLAVA

I tend to enjoy a generous ratio between nuts and pastry, as that makes me feel a little bit better about the copious amounts of sugar in this, but above and beyond that, I think this approach produces the best texture. You can use as many layers of filo as you want, but be careful, since too many may not cook through, and the only way to mess this up is to undercook the dough. The top and bottom layers need to dry out, and thoroughly crisp up, otherwise, once the syrup gets ladled over, you'll have a soggy mess.

Steps:

  • Place walnuts, pistachios, and cinnamon in bowl of a food processor. Pulse on and off until mixture is chopped but not too fine.
  • Brush bottom of 9-inch round baking pan with melted butter. Place one round of phyllo dough in the pan; add a second round of dough. Drip about 1 tablespoon of melted butter over the top. Add 2 more sheets and drizzle with butter. Add 2 more sheets and drip with butter creating 6 layers for the bottom. (While you work keep the phyllo sheets covered with a damp, nearly dry, cotton towel to keep dough from drying out.)
  • Sprinkle with 1/3 of the nut mixture. Top with a sheet of phyllo and drip with melted butter; repeat with 1 more sheet of filo. Add another 1/3 of the nut mixture.
  • Place another sheet of phyllo on the nuts; drip with butter. Top with another sheet and drip with butter. Add the remaining nut mixture.
  • Top with 2 sheets of phyllo; drip with butter. Add 2 more sheets; drip with butter. Top with the last 2 sheets and drizzle generously with the remaining butter. Cover pan with plastic and refrigerate until completely chilled, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut baklava into about 12 diamond-shaped pieces approximately the same size.
  • Bake in preheated oven until browned and crisp, about an hour.
  • Place sugar, honey, and cloves in a saucepan. Pour in water. Place pan over medium-high heat and whisk to combine. Bring to a boil; remove from heat. Whisk in vanilla and orange blossom water.
  • After baklava has rested 5 minutes, ladle syrup over the top. Cool down to room temperature before serving.

BAKLAVA

Many ethnic festivals are held in my city throughout the year. One in May is the Greek Hellenic Festival. My family enjoys baklava-a traditional walnut strudel. The recipe uses phyllo dough, which is not difficult to work with. Just have your ingredients ready to go and follow the directions on the package.   • In a small bowl, combine the walnuts, sugar, cinnamon and cloves; set aside. Brush a 15x10x1-in. baking pan with some of the butter. Unroll 1 package phyllo dough; cut stack into a 10-1/2x9-in. rectangle. Repeat with remaining phyllo. A Greek favorite that makes everyone think you are a master chef and is sooo easy to make!! I taught a Greek friend how to make apple pie and she taught me this fabulous recipe. The phyllo dough for this recipe is found in the freezer section of most grocery stores. Add a little lemon zest to the sugar sauce, if desired.

Steps:

  • Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9x13 inch pan.
  • Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 - 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 - 8 sheets deep.
  • Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp.
  • Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes.
  • Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.

Steps:

  • For the brownie batter:.
  • Melt the butter and chocolate squares in a double boiler, stirring every 30 seconds, until completely melted. Let cool slightly before stirring in the sugar. Beat in the eggs and vanilla until well combined. Sift in the flour and cinnamon and mix. Fold in 1 cup chopped walnuts and 1/2 chopped pistachios. Set brownie batter aside.
  • For the brownie batter:.
  • In a large bowl set over a pan of simmering water, melt the butter and chocolate together over a low heat, stirring constantly until melted.
  • Take off the heat and stir in the sugar, eggs and vanilla until smooth. Fold in the flour, salt, cinnamon, walnuts and 1/2 a cup of the pistachios.
  • For assembly:.
  • Unroll the phyllo dough out on a work surface. Place a 9-inch spring form cake pan on the center of the pastry. Use a sharp knife to cut all the way around the cake tin to make circle-shaped pieces of dough. Keep the phyllo covered with a damp cloth while you are assembling the baklava.
  • Brush the base and sides of the springform pan with melted butter. Place one circle of phyllo dough at the bottom of the cake pan. Brush with melted butter. Repeat this so you have a total of 7 layers of phyllo in the cake pan, each layer having been brushed with butter.
  • Spread half of the brownie batter evenly over the phyllo dough in the cake pan.
  • Layer 7 more sheets of phyllo dough over the brownie batter, brushing each with a layer of butter before laying on the next.
  • Spread the remaining brownie batter over the phyllo.

  • Chill the whole thing for 2 hours, so the brownie batter has firmed up which will make it easier to cut.
  • Once it has been chilled, preheat the oven to 350 degrees F.
  • Using a sharp knife, cut the unbaked baklava into the chevron star pattern (as shown in the video) going all the way through the top layers of phyllo.
  • Bake for 50-60 minutes, until a skewer inserted into the center of the brownie, comes out with some moist crumbs and a bit of batter clinging to it (it shouldn't be completely gooey in the middle, but it also shouldn't be completely cooked through or the brownie will be dry).
  • Remove from the oven and pour the honey over the top of the brownie. Top with the remaining chopped pistachios.
  • Let cool completely, for 2-3 hours, before removing from the spring form pan and cutting into pieces.

Steps:

  • Preheat oven to 350°F.
  • Butter and flour a 9 x 13 pan.
  • Place softened butter in a large bowl or the bowl of an electric mixer, and whisk until it is pale yellow and light.
  • Add sugar and whisk till light and luffy.
  • Whisk in cooled chocolate, then add the eggs 1 at a time, whisking after each addition.
  • Whisk in Vanilla and liquer.
  • Sift in the flour, cocoa, and salt and fold in until combined.
  • Transfer the batter to the prepared baking pan, smoothing it out evenly, and bake in the center of the oven until the brownies have puffed slightly around the edges and are shiny on the surface, about 30 minutes. They will still be very moist in the center.
  • Allow brownies to cool 4-6 hours, but overnight is best.
  • When you are ready to make the baklava, preheat the oven to 375°F.
  • Brush the phyllo sheets with clarified butter and stack them.
  • Cut phyllo sheets into 4 (6 inch) squares.
  • Brush one side of the 4 squares with caramel sauce and sprinkle with half of the chopped pecans.

Steps:

  • Preheat oven to 425.
  • Mix sugar, cinnamon, chopped nuts, and chocolate chips in mixing bowl.
  • Melt butter in medium saucepan/
  • Place one sheet of filo dough in an 11x9 pan and butter it, continuing until you have used 1/8 to 1/4 of the package (my personal preference).
  • Then spread on a layer of chocolate mixture. Repeat with filo dough and chocolate until all is used.
  • Cut into 1" squares. Place in oven and bake about 35 minutes (until golden brown).
  • While that is baking, in a medium saucepan over medium-low, heat the honey, water, and lemon juice until it comes to a light boil. Remove from heat.
  • Once your baklava is out of the oven, place the pan on a cookie sheet and immediately pour syrup mixture over. BE CAREFUL THE SYRUP WILL MOST LIKELY START TO BOIL IMMEDIATELY (sometimes overflowing onto the cookie sheet). Allow to cool, then enjoy.
  • For looks I sometimes melt a few chocolate chips and drizzle them on top.

Steps:

  • Place an oven rack in the middle position. Preheat the oven to 350 degrees F.
  • Grease an 8-inch square baking dish with vegetable oil cooking spray and line with a piece of parchment paper so that it has 2 inches of overhang on 2 sides of the pan.
  • To make the batter: In a large bowl, combine the brown sugar, butter, honey, salt, cinnamon, vanilla extract and lemon zest. Whisk together for 1 minute until smooth. Add the egg and whisk to incorporate. Add the flour and whisk to combine. Fold in the nuts, scrape into the prepared baking dish and bake until puffed and golden brown on the edges but still light in the center, 28 to 30 minutes. Allow to cool in the pan to room temperature.
  • Remove the blondie from the pan and spread the Frosting on top in a swirly layer. Garnish with chopped pistachios and refrigerate for 30 minutes to allow the frosting to get firm for nice slicing. Slice into diamond-shaped bars and serve.
  • To prepare the frosting: In the bowl of a stand mixer fitted with a paddle attachment (or with a hand mixer), cream together the butter and honey until light and creamy, 30 seconds to 1 minute. Add the powdered sugar, lemon zest and juice and salt, then whip for 2 to 3 minutes or until pale and fluffy.

MOM'S BAKLAVA

Steps:

  • Preheat the oven to 350 degrees F.
  • For the honey-citrus simple syrup: Whisk together the sugar, honey, water and lemon juice in a medium saucepan over medium heat and bring to a gentle boil. Reduce the heat to low, add the orange peel and continue to boil without stirring, about 15 minutes. Remove from the heat to cool while you assemble the baklava. The syrup will thicken as it cools.
  • For the nut filling: Add the pistachios and walnuts to the bowl of a food processor fitted with the blade attachment and pulse until coarsely chopped. Transfer the nuts to a large bowl along with the graham cracker crumbs, cinnamon and salt and mix until combined. Set aside.
  • To assemble: Brush a 9-by-13-inch pan with some of the melted butter. Unroll the whole package of phyllo and cut it in half to fit the pan or trim to fit flat. (As you work, cover the unused phyllo sheets with wax paper underneath a damp clean kitchen towel.) Lay 1 sheet of phyllo in the bottom of the pan. Brush with butter, covering the entire surface, then lay another sheet of phyllo on top. Repeat this process until you have 10 layers of phyllo, with butter brushed on top. Add half of the nut mixture, spreading it evenly over the buttered surface, then gently press in with your hands. Begin layering the phyllo and melted butter until you have 10 more layers of phyllo, with butter brushed on top. Add the remaining nut mixture, then layer 10 more sheets of phyllo, brushing with butter in between layers. Brush the top with melted butter, then score the phyllo dough into diamonds, cutting about 1/4-inch deep. (Cut 4 strips lengthwise, then diagonal cuts for a diamond shape).
  • Bake until puffed and golden brown on top, about 1 hour. Ladle the cooled syrup over the top, allowing it to absorb in between pours. Allow the baklava to sit until the syrup is completely absorbed, at least 30 minutes. Separate into bars and serve. The baklava freezes very well.

I make this every year. It really is easy to make and this recipe never fails. Considering the cost of Baklava in the store, this is cheap and I think this is better. It may not be "authentic", but it is really good.

Steps:

  • Unfold Phyllo dough. Cut to fit 9x13 pan.
  • Cover with damp towel while using.
  • Brush bottom and sides of pan with butter.
  • Combine chopped nuts, cinnamon and sugar.
  • Cover bottom of pan with 2 sheets of phyllo dough.
  • Brush with butter, sprinkle with nut mixture. Repeat until all dough is used. Push edges into sides of pan to even them out.
  • Using a sharp knife, carefully cut pastry into squares. Make sure to cut through all the layers.
  • Sprinkle water over top to keep phyllo from curling up.
  • Bake 1 hour.
  • About 15 minutes before phyllo is done, make syrup. If you make sooner than that the syrup will thicken before dough is done. Any later, the baklava will be too cool.
  • In a saucepan, combine sugar, water, karo syrup and orange zest. Bring to boil. Reduce heat and simmer 10 minutes. Stir in honey. Let cool 5 minutes.
  • Remove Baklava from oven and pour warm syrup over entire pan.
  • Let cool for several hours. Syrup will thicken just right.

  • Stir over medium heat until sugar dissolves.
