FRENCH TOAST WITH COGNAC AND CITRUS
Good cooks in many cultures have found delicious ways to revive stale or leftover bread. But the French take first prize with their simple recipe for pain perdu, literally "lost bread," which we have come to know as French toast. Once you've mastered the basics-coating slices of bread in an egg-and-milk mixture and sauteeing them-a range of possibilities opens. - Whisk together eggs, milk, juice, vanilla, cognac, sugar, zest, cinnamon, nutmeg, and salt in a bowl; set aside.
- Place bread in a shallow baking dish large enough to hold bread slices in a single layer. Pour egg mixture over bread; soak 10 minutes. Turn slices over; soak 10 minutes more or until soaked through.
- Preheat oven to 200 degrees. Place a wire rack on a baking sheet, and set aside. Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a skillet over medium heat. Fry half the bread slices until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread. Wipe skillet, and repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Serve warm with maple syrup, if desired.
CITRUS FRENCH TOAST
If you don't have self rising flour, use plain and add 1/2 teaspoon baking powder, and if calories are not an issue, use some more butter or margarine for frying, it makes it even nicer and more like cake. Serve with honey or syrup.

- Whisk together the flour, milk, granulated sugar, almond extract, vanilla extract, cinnamon, salt and eggs in a bowl until smooth.
- Heat a frying pan over medium heat and add some butter.
- Soak the bread slices in the mixture on both sides. Cook the bread until golden brown, 3 to 4 minutes per side. Sprinkle with the powdered sugar. Top with the fresh berries and peaches. Serve with maple syrup and butter.

- Preheat oven to 325°; butter a baking sheet.
- In a shallow pie plate or shallow bowl, whisk the eggs, milk, vanilla, and salt together.
- Dunk the bread slices into the egg mixture and soak them for a few minutes on each side, turning as needed to coat evenly but not fully saturated.
- Place the cornflakes on a plate; press each slice of bread lightly into the cornflakes, coating both sides.
- Warm 2 tablespoons butter on a griddle or in a large heavy skillet over medium heat.
- Briefly cook the French toast in batches until golden brown and lightly crisp, turning once.
- If you wish, sprinkle each slice with sugar; place the first slices on the baking sheet and keep them warm in the oven.
- Continue cooking the remaining slices, adding more butter as needed.
- When all French toast is ready, serve with maple syrup.
CLASSIC FRENCH TOAST
Any dense bread such as challah, brioche, or sourdough will work for this simple French toast recipe.
