Classic Fried Rice image

Steps:

  • Cook bacon in a large skillet over medium heat until crisp. Move bacon to the side of the pan; add egg and scramble. Move egg over and add green onions to the skillet; saute for about a minute. Stir in the rice, add garlic and soy sauce. Toss until mixture is well blended and heated through.;

6 strips bacon, cut 1/2" pieces
1 egg, beaten
8 green onions and tops, sliced
4 cups cold, cooked rice
1 tablespoon minced garlic
3 tablespoons Kikkoman soy sauce

  • Make sauce: In a small mixing bowl stir together soy sauce, oyster sauce, sesame oil and sriracha. Set aside.
  • Cook eggs: Heat a 12-inch non-stick skillet over medium-low heat. Add 1 1/2 tsp oil add eggs and cook, folding constantly until eggs are just set. Break up eggs, transfer to a plate and set aside.
  • Saute vegetables: Heat 1 Tbsp oil in same skillet over medium-high heat. Add carrots and onion and saute until nearly tender about 6 minutes. Add garlic and ginger and saute 30 seconds longer. Scoot to the far side of the pan.

  • Combine the chicken and marinade ingredients. In a separate bowl, combine the hot water, sugar, light soy sauce, dark soy sauce, salt, and white pepper in a small bowl. Set aside.
  • Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). If you are using cold leftover rice, try to break up the clumps as best as possible.
  • Heat the wok over medium high heat and add 1 tablespoon of oil. Add the eggs and scramble them until just done. Remove from the wok immediately, and set aside.
  • Heat the wok until just smoking and spread another tablespoon oil around your wok. Sear the marinated chicken in one layer for 20 seconds. Stir-fry the chicken until about 80% done. Remove the chicken and set aside.
