SWEET POTATO PUDDING
A new twist on the old standard of sweet potato pie but no crust. This has just a hint of orange flavor and is not overly sweet. You will love it! Great side dish for your Thanksgiving feast! If desired, top casserole with marshmallows and brown in oven.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 2 1/2 quart baking dish.
- Bring a large pot of water to a boil. Add potatoes and cook until tender, about 20 minutes. Drain and mash.
- In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice and vanilla; stir until smooth. Pour into buttered dish.
- Bake in preheated oven 40 minutes.

- For topping:
- Toss first 4 ingredients in medium bowl. Add butter; using fingertips, rub in until well blended. Cover; chill. DO AHEAD: Can be made 1 day ahead. Keep chilled.
- For pudding:
- Preheat oven to 400°F. Roast potatoes on baking sheet until tender, 45 to 60 minutes. Cool. Cut in half lengthwise. Scoop flesh into bowl; mash. Transfer 4 cups potatoes to large bowl. DO AHEAD: Can be made 1 day ahead. Cover; chill. Bring to room temperature before continuing.
- Preheat oven to 350°F. Butter 13x9x2- inch baking dish. Add half and half and next 5 ingredients to potatoes. Using mixer, beat on low speed until blended. Season with salt and pepper. Add yolks 1 at a time, blending after each addition. Using clean dry beaters, beat whites in another large bowl until foamy. Add salt and cream of tartar. Beat until peaks form. Fold whites into potatoes; spoon into dish. Sprinkle with topping.
- Bake pudding until puffed and brown, about 45 minutes. Serve immediately.

- While grating sweet potatoes, bring to a slow boil all the spices in 1 cup of water.
- Put the sweet potatoes into a large mixing bowl.
- Just before removing the pot of spices from the stove, add butter or margarine, Karo syrup, brown sugar, and salt.
- Stir while the butter melts.
- Remove the cinnamon sticks.
- Pour this mixture over the grated sweet potatoes.
- Blend well together.
- Put in a well-buttered casserole dish and place in a preheated 350 degrees oven.
- Bake, stirring well two or three times, until the sweet potatoes are tender and the top is lightly browned.
- This takes about 1 hour.
- Remove from the oven and let stand about 5 minutes before serving.
- When stirring you may decide extra spices are needed or more water so mix up more water and spice and add them.
- You may add more Karo syrup or butter as well as spices.

SWEET POTATO PUDDING

- Preheat the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.
- With an electric mixer, beat together all the pudding ingredients until smooth and light. Pour the pudding into the baking dish. Transfer to the oven and bake for 25 minutes.
- Sprinkle the praline mixture over the pudding and bake for an additional 20 to 25 minutes, until the pudding is set and slightly puffed. The top will sink as the pudding cools. Serve warm or at room temperature.
- In a small bowl, combine the ingredients and reserve to use as topping for the sweet potato pudding.

- Check with a grownup, and wash your hands before you begin.
- Preheat the oven to 350 degrees.
- Open the can of sweet potatoes.
- Using a sieve or colander, drain out all the liquid.
- Pour the sweet potatoes into a large bowl.
- Mash the sweet potatoes with a potato masher or a fork.
- Melt the butter in a medium microwave-safe bowl.
- DO NOT OVERCOOK the butter!
- Microwave for 30 seconds at a time (as many times as needed) until the butter is melted.
- Then pour melted butter into mashed potatoes and stir it inches (Be careful! The butter might be hot.).
- Add brown sugar to the potato mixture, and stir it inches.
- Crack eggs into a medium bowl, and beat them with a fork until smooth and yellow.
- Pour eggs into the potato mixture, and stir them inches.
- Add milk, sweetened coconut flakes, and spices to the potato mixture.
- Stir everything together until it is mixed. (Note: if you don't have all the spices, don't worry. Adding even one or two spices will make it tastier!).
- Pour the potato mixture into an oven-safe, glass, baking dish.
- Using oven mitts, place the potatoes into the oven.
- Bake uncovered for 45 minutes at 350 degrees.
- Clean up the kitchen while the wonderful aroma of baking sweet potato pudding fills your kitchen!
- When the timer rings, your sweet potato pudding is done!
- Ask a grownup to use oven mitts to take the baking dish out of the oven.
- Set the dish someplace safe to cool.
- Make sure to turn off the oven.
- Enjoy your pudding warm (but not too hot!), or cold.
