Onion-Tomato Relish image

Steps:

  • Heat the oil in a medium skillet over medium-high heat. Add onions; cook, stirring occasionally, until beginning to soften, about 7 minutes. Reduce heat to medium. Add tomatoes; cook, stirring occasionally, 10 minutes.
  • Stir in sugar, vinegar, salt, and cayenne pepper. Cook, stirring occasionally, until onions are soft and mixture is shiny, about 20 minutes (if the onions begin to brown, reduce heat to medium-low). Serve warm or at room temperature.

2 tablespoons canola oil
3 medium yellow onions (about 1 1/2 pounds total), finely chopped (about 2 1/2 cups)
1/3 cup canned diced plum tomatoes with juice
1 teaspoon sugar
3 tablespoons plus 1 teaspoon cider vinegar
2 teaspoons coarse salt
Pinch of cayenne pepper

Ficelles are thin baguettes, named after the French word for string. If you can't find one, use a baguette.

Cocktail Franks in a Baguette with Onion-Tomato Relish image

Steps:

  • Heat oil in a large skillet over medium heat. Add franks, and cook, turning occasionally, until golden brown and heated through, 6 to 8 minutes.
  • Spread cut sides of bread with relish. Place franks, end to end, on top of relish. Cut sandwich into 6 equal portions, and serve with yellow mustard.

1 tablespoon canola oil
12 cocktail franks, separated if needed
1 ficelle or other thin baguette, split open lengthwise
Onion-Tomato Relish
Yellow mustard, for serving

Steps:

  • In a large skillet, combine the olive oil and the red onion over medium low heat. Cook until softened, about 5-10 minutes.
  • Lower the heat, and add the tomatoes, brown sugar, and vinegar. Cook until thickened, about 10 more minutes.

Steps:

  • In a large saucepan, combine all ingredients except franks.
  • Bring to a boil stirring frequently and reduce heat.
  • Add franks and simmer 10 minutes.
  • Keep warm in a crockpot, fondue pot or chafing dish.
  • Serve with toothpicks.

Steps:

  • Place the sliced tomatoes, onions, carrot and cucumber in a bowl. Squeeze lemon juice over the mixture and add the horseradish. Sprinkle with the red-pepper flakes and garam masala, then season with salt and pepper. Toss together to mix.
  • Allow flavors to develop at room temperature for at least 30 minutes or up to 3 hours, then serve as a relish or salad.

4 ripe but firm tomatoes, very thinly sliced
2 medium red onions, halved then very thinly sliced
1 carrot, peeled and sliced
1/2 cucumber, peeled and sliced
1 lemon, juiced (4 to 5 tablespoons)
