COCONUT BREAD (NO EGGS, NO FAT, BUT RICH AND MOIST)

If eggs and fats are no-no's for you, then try this. I think you'll like it. I seem to have had this recipe forever, don't know where it came from.

Coconut Bread (no eggs, no fat, but rich and moist) image

Steps:

  • Mix the coconut and the milk and leave to soak for 30 minutes.
  • Sift the flour, baking powder, cloves, cinnamon and salt into a bowl.
  • Stir in the sugar.
  • Add the coconut and milk and mix to make a soft batter.
  • Pour into a greased 3lb. loaf tin.
  • Smooth the top and bake for 1 1/4 to 1 1/2 hours at 350 degrees F.

14 ounces flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 pint milk
10 ounces caster sugar (fine sugar)
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition. Stir in coconut., Pour into a greased 9x5-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 1 hour. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
