Steps:

  • Preheat the oven to 350 degrees F.
  • To make the cake, whip the egg whites until stiff, but not dry in an electric mixer. Set the whites aside.
  • Switch to the paddle attachment. In a clean bowl cream the butter with the shortening, and sugar until fluffy. Add the yolks, 1 at a time, beating well after each addition. Stir in the vanilla.
  • Sift the flour and baking soda together. Add the flour mixture to the butter mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Beat in the coconut and pecans. Gently fold in the whipped egg whites. Do not overmix.
  • Pour the batter into the prepared pans and bake until toothpick comes out clean, about 25 minutes. Do not overbake or cake will become too dry. Remove the cakes from the oven and cool in pans for 10 minutes. Turn the cakes out onto a rack. Cool completely.
  • To make the frosting: Cream the cream cheese with the butter in an electric mixer. Gradually beat in confectioners' sugar. To achieve the spreading consistency you desire, add milk to thin, as needed. Add the vanilla and beat in 1 cup of coconut and the chopped nuts. Frost the cake and sprinkle the toasted coconut and pecans.

Steps:

  • Add instant coffee to cake mix and prepare cake according to instructions on package. Pour batter into 2 greased and floured 9 inch cake pans. Bake according to instructions on package. Allow to cool.
  • With a large serrated knife, split each layer horizontally to make 4 layers. Sprinkle 1/4 cup of the coffee liqueur on each of the 4 layers.
  • Make the pudding according to package directions, but add the remaining 1/4 cup of coffee liqueur. Spread 1/3 of pudding between each layer of cake as you assemble. Whip cream with sugar until stiff peaks form. Spread on top and sides of cake. Sprinkle with coconut.

Steps:

  • Butter and flour an 8-inch square or round baking pan (a bundt pan also works well).
  • Preheat oven to 350°F.
  • For the streusel: In a small skillet or saucepan melt the butter over medium-low heat and add dessicated coconut and walnuts. Cook, stirring occasionally for 8-10 minutes, or until coconut and walnuts start to get toasty and smell fragrant. Be careful not to burn. Remove from heat and stir in brown sugar and cinnamon and empty half this mixture into the bottom of your prepared baking pan. Reserve other half.
  • For the cake: In a small bowl, whisk together eggs, coconut milk, liqueur and orange zest. Set aside.
  • In a large mixer bowl, cream butter with sugar for 5 minutes, or until light in color and fluffy. You may need to scrape down the sides and bottom of bowl a couple of times with a spatula. Add baking powder, baking soda, vanilla extract, salt, cinnamon, ginger, cardamom, nutmeg and cloves.
  • Add flour, alternately with wet ingredients (egg, etc.) until blended through. You may need to scrape down the sides and bottom of bowl a couple of times with a spatula.
  • Pour 3/4 s of the batter into your prepared pan and layer with reserved streusel mixture. Pour remaining batter over top and run knife through pan, marbling streusel into the batter.
  • Bake for approximately 1 hour and 20 minutes, or until a wooden toothpick inserted into the centre of the cake comes out clean. Allow to cool 20 minutes before removing from pan.

  • Coffee-cake topping:
  • Combine 1/2 cup flour, coconut, 1/2 cup brown sugar, and cinnamon in a bowl. Toss in melted butter and set aside.
  • Batter:
  • Preheat the oven to 325°F Lightly coat a 9-inch round springform pan with a little of the softened butter and set aside. Combine the remaining flour, baking powder, and salt in a bowl and set aside. Beat the egg yolks, remaining brown sugar, granulated sugar, and vanilla using an electric mixer set on high speed until the mixture is thick and pale yellow, about 2 minutes. Mix in the remaining butter and the sour cream. Reduce mixer speed to low, add flour mixture, and mix.
  • Cake:

Steps:

  • Make the streusel:
  • In a bowl stir together the brown sugar, the flour, and the cinnamon, add the butter, and blend the mixture until it resembles coarse meal. Stir in the coconut and reserve the streusel.
  • Make the cake batter:
  • In a bowl with an electric mixer cream the butter, add the brown sugar, and beat the mixture until it is light and fluffy. Add the eggs, 1 at a time, beating well after each addition, and the vanilla and beat the mixture until it is combined well. In another bowl whisk together the flour, the baking powder, the baking soda, and the salt, add the flour mixture to the butter mixture alternately with the sour cream, beginning and ending with the flour mixture and beating the batter after each addition until it is just combined, and stir in the coconut.
  • Spoon half the batter into a buttered and floured tube pan, measuring 10 inches across the top and about 4 inches deep, with a removable bottom, spreading it evenly. Sprinkle half the reserved streusel over the batter and spoon the remaining batter into the pan, spreading it carefully over the streusel. Sprinkle the remaining streusel over the top and bake the cake in the middle of a preheated 350°F. oven for 1 to 1 1/4 hours, or until the tester comes out clean. Let the cake cool in the pan on a rack for 10 minutes, remove the tube section from the pan, and run a thin knife under the cake to release the bottom. Lift the cake off the tube section of the pan with 2 long spatulas, let it cool completely on the rack, and transfer it to a serving plate.

  • Combine flour, sugar, baking powder, salt.
  • Using a pastry blender, cut in butter until mixture is crumbly.
  • In another bowl, whisk together eggs and milk, then add to the flour mixture, stirring just enough to moisten the ingredients (overmixing will make a tough cake).

  • Drain pineapple, reserving 2 tablespoons of juice, set pineapple and reserved juice aside.

  • Make crust:
  • Put oven rack in middle position and preheat oven to 375°F.
  • Line mold with a double layer of parchment paper, allowinga few inches of overhang along each side.
  • Stir together crumbs, espresso powder, and butter and press over bottom of mold. Bake until crisp, about 10 minutes, then cool completely in mold on a rack, about 20 minutes.
  • Make ice cream layer:
  • Scoop and drop ice cream and sorbet alternately into mold in 1 layer until crust is covered, then smooth with offset spatula until flat. Make another layer in same manner. Freeze, covered with plastic wrap, until firm, at least 2 hours.
  • Make fudge sauce and finish cake:
  • Bring cream, corn syrup, brown sugar, cocoa, salt, and half of chocolate to a boil in a 1- to 1 1/2-quart heavy saucepan over moderate heat, stirring until chocolate is melted. Reduce heat and simmer, stirring occasionally, 5 minutes, then remove from heat.
  • Add butter, vanilla, and remaining chocolate and stir until smooth.
  • Cool fudge sauce to warm, at least 15 minutes.
  • Pour warm sauce over ice cream layer and freeze again, uncovered, until firm, about 15 minutes. Remove cake by grasping both ends of parchment, and transfer it to a platter. Using a spatula to stabilize end of cake, carefully slide parchment out from under cake.

Butter-Orange-Coconut Coffee Cake image

Steps:

  • In bowl soften yeast in water.
  • Stir in eggs,JUST 1/4 cup sugar, the sour cream, and JUST 6 TBS.
  • butter, and salt.
  • Stir in 2 3/4 cups flour.
  • On floured surface knead enough flour in to make a moderately soft dough.
  • Knead til smooth and elastic, about five minutes.
  • Place in greased bowl, turn.
  • Cover and let rise in a warm place about 1/12 hours or until double.
  • Punch down Turn onto floured surface.
  • Divide in half.
  • Shape each half into a ball.
  • Cover and let rest ten minutes.
  • Roll each half into a 12 inch circle.
  • Brush each with 1 TBS of remaining butter.
  • Combine remaining sugar, JUST 3/4 cup of coconut,and the orange peel;sprinkle over dough.
  • Cut each circle into 12 triangles.
  • Roll up each piece starting at wide end.
  • Arrange rolls, like a pinwheel in two greased 9" round pans.
  • Cover;let rise again til double (30 mins) Bake in 350 oven for 25-30 minutes.
  • Immediately remove from pans and put on wire racks, with waxed paper under.
  • Glaze In saucepan combine sugar, the sour cream, orange juice, and butter.
  • Stir over medium heat until the sugar dissolves.
  • Boil 3 minutes stirring constantly.
