Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Combine the beef, egg, cheese, breadcrumbs, onion, garlic, 2 teaspoons mustard, the Worcestershire sauce, paprika, 1 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until combined. Form into 1 1/2-inch meatballs (about 24) and arrange on the prepared baking sheet.
  • Mix the ketchup, brown sugar and remaining 1 teaspoon mustard in a small bowl and brush on the meatballs. Bake until lightly browned and cooked through, about 15 minutes. Transfer to a platter and top with scallions.

Meatballs with fennel & balsamic beans & courgette noodles image

Steps:

  • Put the mince, oregano, egg and grated garlic in a bowl and grind in some black pepper. Mix together thoroughly and roll into 16 balls.
  • Heat the oil in a large sauté pan over a medium-high heat, add the meatballs and fry, moving them around the pan so that they brown all over - be careful as they're quite delicate and you don't want them to break up. Once brown, remove them from the pan. Reduce the heat slightly and add the fennel, carrots and sliced garlic to the pan and fry, stirring until they soften, about 5 mins.
  • Tip in the passata, balsamic vinegar and bouillon, stir well, then return the meatballs to the pan, cover and cook gently for 20-25 mins.
  • Meanwhile, heat the 1 tsp of oil in a non-stick pan and stir-fry the courgette with the beans to heat through and soften. Serve with the meatballs and scatter with any fennel fronds.

Steps:

  • Heat 1 tbsp olive oil in a large frying pan, add onion and fennel and cook for 8 mins until soft. Add chilli flakes and fennel seeds and cook for a further 2 mins. Remove from the heat and allow to cool, then mix in pork mince with some seasoning. Form into bite-sized balls.
  • Heat 1 tbsp olive oil in a large frying pan. Add the meatballs and cook for 10-15 mins until golden and cooked through. Serve at room temperature with cocktail sticks.

Frikadelle - South African Meatballs - Boerewors Style image

Steps:

  • Grind the whole fennel and coriander seeds with a mortar and pestle until a coarse consistency. Or, place them in a small Ziploc bag and hammer with a meat mallet, smooth side.
  • In a large mixing bowl combine all ingredients in the order given.
  • Mix well so that everything is evenly distributed.
  • Using an ice cream scoop - or a 1/3 cup measure - roll into balls then press slightly so they resemble chubby hamburgers - 2" in diameter - 3/4" thick.
  • At this stage you can freeze them as you would hamburgers.
  • To cook - heat the oil in a non stick frypan and brown on both sides.
  • Use the pan juice to fry up some sliced onion and make a rich onion gravy.
  • Return the patties to the gravy and cook on low until no longer pink.
  • Serve on top of creamy garlic mashed potatoes.
  • Instead of onion gravy - I sometimes simmer them in a curry sauce made of fried onion, garlic, curry powder (authentic quality) - coconut milk and crushed tomatoes in even quantities. Serve on basmati rice.

  • Preheat oven to 375 degrees F (190 degrees C).

This is the best cocktail meatball I've ever had. We didn't have chili sauce, but I found Recipe #363254 and made it homemade. Really a surprising but wonderful concoction of ingredients--sweet and spicy. We used blackberry jelly instead of grape and baked the meatballs in the oven at 350 for 20 minutes or so instead of cooking in shortening.
