GLUTEN FREE COCONUT FLOUR TORTILLAS

The coconut flour tortillas are gluten free, grain free and low in carbohydrates. They are great to use in enchilada recipes or as a sandwich wrap. These will not have the same texture as wheat flour tortillas, however they are a great substitute every now and then when on a gluten free diet.

Steps:

  • Pour egg whites and water into a medium bowl.
  • Sift coconut flour and salt into the egg white mixture.
  • Heat a frying pan and melt 1 teaspoons of butter or oil to grease the bottom of pan.
  • Slowly pour 2-3 tablespoons of the coconut flour mixture onto the pan and quickly (and carefully) spread the batter around into a larger, thin circle by turning the pan.
  • Fry for about 1-2 minutes on the first side, or until the edges start to lift and you can easily move your spatula underneath the cooking tortilla without it breaking. Flip and cook on the other side.
  • Serve.

2 tablespoons water or 2 tablespoons coconut milk
1 tablespoon coconut flour
1/16 teaspoon salt
1 teaspoon butter or 1 teaspoon coconut oil, for frying

Steps:

  • Stir together flour, baking powder and salt.
  • Gradually stir in enough warm water to form a crumbly dough; then work dough with your hands until it holds together.
  • Turn out onto a board and knead until smooth.
  • Divide into 12 pieces and shape each into a smooth ball.
  • Cover lightly with plastic film and let rest about 15 minutes.
  • For each tortilla, flatten one ball into a 4 or 5-inch patty, then roll into a 9-inch round, rolling from center to edges.
  • Turn tortilla often, stretching dough as you carefully peel it off board.
  • Make sure these are paper thin, the thinner, the better!
  • As each tortilla is shaped, place on preheated, dry, heavy griddle or heavy wide frying pan over medium-high heat.
  • On a preheated electric griddle set at medium-high heat or about 375 degrees.
  • Almost immediately, tiny blisters should appear.
  • Turn tortilla and immediately start pressing a wide spatula directly on top of it-- press gently but firmly all over the top.
  • Blisters will form over most of surface as you press.
  • Turn tortilla and press all over other side until bilsters turn a golden brown; tortilla should remain soft.
  • If tortillas stick or brown too quickly, reduce heat.
  • Stack tortillas as cooked inside a folded cloth towel within a plastic bag; close bag and let tortillas steam and soften until all are cooked.
  • Serve tortillas as soon as they are soft; or cool, remove from bag, wrap in foil, and refrigerate or freeze.

Pour 1/4 cup (60 mL) of batter onto the skillet and immediately, rapidly tilt in different directions to evenly distribute, like making crepes. Cook, covered with a lid, until the edges are golden and you see bubbles forming in the middle. The edges will curl inward when you lift the lid (about 1-2 minutes). Flip over, cover again, and cook until browned on the other side (1-2 more minutes). Repeat until the batter is used up.
