A senior Malaysian chef taught me this recipe on my travels. It has been handed down through the generations and never been published until now.

- Make sure that the toast is toast, not bread, by putting it in the toaster before you put the coconut oil on it.
- Spread coconut oil on the toast.

- In a bowl, combine the coconut, sugar, butter, egg and vanilla; mix well. Spread over each slice of bread; place on ungreased baking sheets. Bake at 350° for 15-20 minutes or until lightly browned.

- In a large bowl, beat eggs; add milk, sugar and cinnamon. Add bread, a few slices at a time; let soak for 1 minute on each side. Coat both sides with coconut. - In a shallow bowl, add your eggs and slightly whisk them. Then add in your almond milk or coconut milk, brown sugar, vanilla extract, almond extract, and cinnamon.
