COD WITH HERBED WHITE-WINE LEMON SAUCE
This recipe can be made using any fresh mild-flavored white fish, such as cod, sole, sea bass, or flounder.

Steps:
- Combine shallot, wine, and lemon juice in a small skillet; set over high heat. Bring to a boil; simmer until liquid is reduced to 1/4 cup, about 10 minutes. Remove from heat; whisk in butter, capers, 1/4 teaspoon salt, a pinch of pepper, and 3/4 of the herbs. Set aside; keep warm.
- Heat a large skillet over medium-high heat; add 3 tablespoons sauce. Season both sides of fillets with remaining 3/4 teaspoon salt and a pinch of pepper. Arrange fillets and lemon slices in skillet; sprinkle with some herbs. Cook until fillets are golden, about 4 minutes. Turn, sprinkle with remaining herbs, and cook until fish is cooked through, about 3 minutes. Serve with lemon slices and remaining sauce.

- Preheat the oven to 375°F.
- For the Wine Sauce:.
- Heat the oil in a large saute pan over medium heat, add the garlic and pepper flakes and saute for 1 minute or until the garlic is fragrant. Add the tomatoes and stir, every few minutes until they are blistering, but keep their shape (9-12 minutes).
- Add the wine, stir and allow the sauce to come to a mild simmer. Stir in the basil, lemon juice, lemon zest, salt & pepper, and cook for 2 minutes. Transfer the sauce to bowl, cover and set aside.
- For the Cod:.
- Heat the oil in the same pan on medium heat. Season the cod on both sides with salt and pepper. Add the seasoned fish to the hot pan and cook until golden brown, approximately 5 minutes. Carefully flip the fish over and place the pan in the oven for an additional 5 minutes, or until the fish is cooked.
- Pour the reserved sauce over the cod fish and serve.

- Butter the baking dish.
- Add the cod, butter and white wine.
- Pre heat the oven to 220c or gass mark 7.
- Cover With foil and cook for 10-15 minutes.
- Remove fish with a slotted spoon and keep warm, Add the juices from the baking dish to a pan.
- Add the remaining butter and reduce untill the sauce slightly thickens.
- Serve with sprigs of parsley.

- FOR THE COD;.
- In the same pan, heat oil over medium heat. Season both sides of the cod fish with salt and pepper. Add the seasoned cod to the pan and cook until golden brown, approximately 5 minutes.
- Carefully flip the cod over and place the pan in the oven to continue cooking for an additional 5 minutes, or until the fish is cooked.
- Pour the white wine tomato basil sauce over the cod and serve.

PERFECT TEN BAKED COD
Simple, fast, and delicious describes this baked cod recipe. Bake for two sets of 10 minutes each and you have the perfect ten dinner! This recipe was a favorite request from a local restaurant. They closed after years in business and we are happy to share a version of their most requested recipe. I serve this with rice pilaf and fresh spinach that has been lightly seared in olive oil and garlic. Yummy!

- Preheat oven to 400 degrees F (200 degrees C).
- Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.
- Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.
- Coat both sides of cod in melted butter in the baking dish.
- Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Place back in oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.
- Garnish baked cod with parsley and green onion. Serve with lemon wedges.

Steps:
- Saute the garlic in the olive oil until it starts to turn light tan in color.
- Add the white wine and bring to a boil.
- Salt and pepper the fish to taste.
- Carefully slide the fish in the pan of boiling wine skin side down, when it appears as though it is starting to flake, gently flip it to cook the other side. If you prefer you can double the wine and poach the fish without flipping, providing the fish is covered with enough wine.
- When the fish is cooked remove and add the lemon and capers.
- Reduce the wine and add the butter, top the fish with the sauce and enjoy!
