COFFEE GELATIN DESSERT
Sweetened coffee flavored gelatin is best eaten with a dollop of whipped cream on top. This is a fabulous dessert I once enjoyed at a Japanese restaurant, of all places!

Steps:
- In a saucepan, stir together the sugar and gelatin. Mix in hot coffee and water. Cook over low heat, stirring frequently until the gelatin and sugar have completely dissolved. Remove from heat, and stir in lemon juice. Pour into a 4 1/2 cup mold. Refrigerate until set, at least 6 hours or overnight. Serve with whipped cream.

FROZEN ICED COFFEE WITH COFFEE JELLY
This sweet and refreshing drink features layers of chocolatey coffee slushie, vanilla whipped cream, and coffee jelly (think coffee jell-o).

Steps:
- Make the coffee jelly:
- Dissolve gelatin in 3 Tbsp. cool water in a small bowl. Let stand until bloomed, about 2 minutes.
- Meanwhile, combine hot coffee and sugar in a loaf pan or large resealable container. Gently stir gelatin mixture into coffee until combined (do not stir too vigorously or air bubbles will appear). Chill until firm, about 2 hours.
- Make the whipped cream:
- Using an electric mixer on medium-high speed or a whisk, whip cream in a large bowl until soft peaks form. Add sugar and vanilla and whip to medium peaks.
- Make the frozen iced coffee:
- Blend coffee, syrup, cream, sugar, vanilla, and 3 cups ice in a blender until smooth.
- Assemble the drink:
- Cut coffee jelly into 3/4" cubes. Fill 4 tall glasses with 1/2 cup cubed coffee jelly each. Spoon 3 Tbsp. whipped cream over each and spread to create a solid layer of cream. Divide frozen iced coffee (about 1 cup each) among glasses on top of cream layer. Top with more whipped cream and serve immediately with bubble tea straws.
COFFEE JELLY
A refreshing Japanese summertime treat! My favorite way to serve it is with frozen whipped cream and chocolate sauce, although it's also delicious with ice cream, regular whipped cream, or flavored coffee cream! It can be served solid in glasses, or cubed in bowls.

ORANGE COFFEE JELLO
I love coffee jello and I love the combination of coffee and orange, so I came up with this. For the orange flavour I used orange essence # 340691. For the sweetener I just made up the amount of 1 tablespoon, but as I used rice syrup and don't make my jello really sweet, I'd suggest that you just make your coffee as sweet as you're used to. For the gelatine I used 3/4 bag of ground gelatine (1 bag is for 2 cups of liquid) which I soaked in the orange essence and two tablespoons water and then stirred into the still hot coffee. As packages of ground gelatine don't seem to be listed, I suggest 5 sheets gelatine which you should soak and dissolve according to package directions. Prep / cook time does not include chilling time.

- Prepare 1 1/2 cups strong coffee.
- Sweeten brewed coffee to taste, then add vanilla and orange essence.
- Dissolve gelatine according to package directions.
- Combine dissolved gelatine and coffe.
- Fill two cups or glasses with jello mixture, let cool.
- Chill for at least two hours.
- To serve, whip cream and top each serving with half of the whipped cream.
- Sprinkle with cocoa (you can also use some chopped dark chocolate).
- Enjoy!

- 1. Place 1/2 c cold water in a bowl. 2. Sprinkle 3 unflavored gelatin packets over the water. Let sit until the gelatin blooms, about 10 minutes. 3. Stir in the hot coffee and mix until the gelatin is completely dissolved. 4. Stir in the can of sweetened condensed milk. 5. Pour into glass pan. Thickness of finished jello depends on the size of the pan. I used a 7 x 11 pan but a 9 x 13 pan will give you thinner pieces and an 8 x 8 pan will give you thicker pieces. Note: The combo of coffee and sweetened condensed milk is inspired by Vietnamese coffee. You can probably adapt this to use coffee or espresso, cream and sugar (be sure to dissolve the sugar in the hot coffee and gelatin). I find that 1 packet of unflavored gelatin will firm up 1 1/2 cups of liquid to finger jello "strength" (according to David Lebovitz's "How to Use Gelatin" post you can mold 2 cups with one envelope - but I feel finger jello needs to be stronger).
COFFEE & BAILEYS JELLO CUBES
All who like coffee and Baileys will love this different treat. Don't drink coffee and Baileys, EAT it. Your guests will be surprised, if you serve Coffee & Baileys not in a cup or glass, but on a spoon or plate. Fancy looking and easy to make.

Steps:
- Let soak 7 sheets of leaf gelatin in cold water (for about 5 minutes).
- Make coffee. Make it as strong as you like. Add brown sugar and mix until sugar is dissolved.
- Take the gelatin out of the cold water and stir into the hot coffee until disolved. Let cool slightly.
- Meanwhile prepare a suited form of about 10 x 6 inches in size. Line out with cling film. Fill in the coffee mixture and put into the fridge for about 2 hours.
- Then soak 4 sheets of leaf gelatin in cold water (for about 5 minutes).
- Heat up the whipping cream. It should be warm. Take the gelatin out of the cold water and stir into the warm whipping cream until dissolved. Add Baileys and mix.
- Let cool, but don't let it gelatinize. Take Coffee jello out of the fridge and pour carefully the Baileys mixture onto the coffee jello.
- Put in the fridge and chill for at least 6 hours (or overnight).
- Take the "Coffee & Baileys Jello" together with the cling film out of the form.
- Cut it into cubes of about 1 inch using a thin sharp knife. Serve immediately or put them back into the fridge until use.
- NOTE: Should be make ahead one day prior serving.
- NOTE: Cooking time is for making one day ahead.
- NOTE on Gelatin: if you can't get leaf gelatin, you may use granulated gelatin. 4 sheets leaf gelatin are 1 envelope (o,25 oz) granulated gelatin. I would suggest to use 2 envelopes for the coffee part and 1 envelope for the Baileys part.
