COFFEE SLUSH

This make-ahead frozen beverage made with coffee and half and half is perfect for teas and showers. Simple yet delicious! Save coffee from the day before in the fridge. Everyone will want your recipe!

Steps:

  • Mix cream, coffee, sugar, and vanilla extract together in a freezer-safe container. Cover container and freeze until coffee mixture is solid, at least 3 hours.
  • Remove container from freezer and defrost in room temperature for 1 hour. Break coffee mixture apart with a fork creating a slush-like consistency. Transfer to a punch bowl or large pitcher.

COFFEE SLUSHIE, LOW SUGAR - FAT FREE

This is lovely but some may find that it needs a bit more coffee flavor. I use a rounded tbsp of the coffee when I make it. I'm partial to hazelnut flavor coffee and I like to add a pinch of cinnamon as well. This amount will make 2 smaller drinks or one tall glass serving.

  • Place all ingredients in blender container; cover.
  • Blend on high speed until ice is crushed.
  • Pour evenly into 2 glasses.

Steps:

  • Crush ice cubes in your blender or in a freezer bag using a rolling pin or any other heavy instrument you have handy (I actually use my maglite torch ;)).
  • Add soy milk and vanilla and blend on high until slushie like in consistency.
  • Enjoy!

Steps:

  • Preheat oven to 350°F and line a muffin pan with paper or foil liners.
  • Whisk together the soy milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add the sugar, yogurt, vanilla extract, and other extract, if using, to the soy milk mixture and beat until foamy. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat until no large lumps remain (a few tiny lumps are OK).
  • Pour into liners, filling 3/4 of the way. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.

  • In a non-stick pot, heat oil.
  • Add orzo and sautee until browned.
  • Add the rice.
  • To the 3 cups of boiled water, add the chicken soup mix, garlic powder, turmeric, black pepper, and turmeric.
  • Add seasoned water mixture to the pot, cover, and simmer for 20 minutes until all water has evaporated. Don't open lid.
  • Remove from heat after 20 minutes and allow to rest 10minutes.

These are a frozen drinks I thought up one day and tried. Since you are only limited by what frozen juice is available, almost anything is possible. This can be made "adult" easily by substituting some of the water with alcohol of choice. Sometimes we make a blender, serve the kids theirs then blend in our alcohol after. The frozen screwdriver slushie is awesome.
