BUTTERY COOKED CARROTS

Sweet cooked carrots that even my carrot hating family loves. There are never leftovers.

Buttery Cooked Carrots image

Steps:

  • Cook carrots in a large pot of boiling water until tender. Drain off most of the liquid, leaving bottom of pan covered with water. Set the carrots aside.
  • Stir margarine and brown sugar into the water. Simmer and stir until the margarine melts. Return carrots to the pot, and toss to coat. Cover, and let sit for a few minutes to allow flavors to mingle.

Steps:

  • Preheat the oven to 400 degrees F.
  • If the carrots are thick, cut them in half lengthwise; if not, leave whole. Slice the carrots diagonally in 1 1/2-inch-thick slices. (The carrots will shrink while cooking so make the slices big.) Toss them in a bowl with the olive oil, salt, and pepper. Transfer to a sheet pan in 1 layer and roast in the oven for 20 minutes, until browned and tender.
  • Toss the carrots with minced dill or parsley, season to taste, and serve.

Steps:

  • Preheat oven to 350 degrees F.
  • Place cooked carrots in 9" pie pan, set aside.
  • In small saucepan over moderate heat, melt butter; add onion and cook until lightly browned, remove from heat.
  • Stir in brown sugar and mustard; blend and spoon over carrots.
  • Bake uncovered for 15 minutes or til lightly glazed.

2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Melt 2 Tbs butter in a medium skillet and add the carrots through salt plus ¾ cup water.
  • Simmer over medium-low heat, covered, 20 minutes.
  • Remove cover and raise heat to high.
  • Cook, stirring often, about 6-8 minutes until nearly all the liquid evaporates.
  • Add the remaining 1 Tbs butter plus the vinegar through nutmeg.
  • Lower the heat to medium and cook, stirring constantly, until all the sugar is melted and the glaze is thick enough to coat carrots.
  • Serve immediately.
